    Heat control for salmon cook

Jim, I tried making salmon ONCE with the water in the water pan in by mistake for me since I always just put it in without water. My results did not come out good as the salmon seemed to be steamed somewhat and the outside bark not as good. I used atlantic salmon from Costco that day which did...

    Heat control for salmon cook

I would use half the charcoal you used since it is only going to be a 1/2 - 1 hour cook. Also I would still cook without water in the pan.

    Heat control for salmon cook

Rita, I would not use water in the pan as I do not want it to possibly steam. If I used water I would put the salmon on the top rack. To bring the temperature down I would use only a half full ring of charcoal. I would cook it to 140 internal to make sure it is not dry. In my opinion any...

Brand new here; just got our WSM today

Look in the 'tuna steaks' thread below and I have posted a recipe for salmon. If you follow my recipe, you will notice I have no water in the pan and the grill temperature is only 190-200 for about 1 hour. I would make the salmon first, It does take some prep. I brine it first for 1 hour and...

    Tuna steaks

Here is a previous post for salmon. You can do the same for tuna. I fired up the WSM for the first time today smoking 4 lbs. of norwegian salmon. It came out fantastic!! SO JUICY AND MOIST!! The alder wood was perfect giving it just a hint of smoke. I liked the subtleness. Here are my notes...

    Tuna steaks

Try brining them beforehand for 1 hour and then setting them out on a rack to air dry or fan dry and smoke them at 190 degrees. If you smoke a 1/2 lb piece it should only take about 60-75 minutes to cook. I have cooked 1/2 pound pieces that have filled both grills and they usually take about...

A neighbor friend of mine was working on a project building some alder wood frames or something and he bagged the project. He didn't want the wood so I took it off his hands. It is not treated. Can I smoke with it?

the cookin is underway -- help!

Close the bottom vents. Burp the lid by tilting it open for 1-2 seconds and then putting it back on. In my experience 250 is fine. If it gets hotter than your ribs will be done sooner. After they are done you can always foil them and put them in a cooler to hold the moisture in.

    Hoisin Sauce experiment

The ribs came out very well moist and juicy and almost too tender. I would do a few things differently next time. There was too much marinade left on the ribs when I put them in. This would have given me a little better bark. I would foil after 4 hours and then only put a very small amount of...
