Holding whole Pork Butts for around 7-9 hours

I am smoking 2 butts and 2 briskets for a family get together tomorrow. I can't cook them all at the same time so my plan is to start pork around noon today with the goal to have it done sometime around 5-6 am tomorrow, at that point I plan to do the briskets using a high heat method. The plan...

    INTRODUCING: the "Roto Damper"

Got my RD3 from Ralph and everything looks good and is working well. I also have the parts for the TC AUX board but my soldering skills are subpar and I could not get the SMD stuff done so I have to enlist some help of a friend to get it set up. For now I just have it wired into a CAT5 desktop...

Do you need a Handle for the front of the 18.5" Lid when adding a hinge?

I recently installed a hinge on my 18.5" WSM and I don't see any reason to add a handle to the front of the lid. It's easy enough to open using the handle on top.

    On board speaker?

Thanks Ralph that's what I did. It was simply user error.....

    On board speaker?

I am not sure the on board speaker is working. What would be the best way to test it? I tired setting some alarms or using the test button in the configuration but it never sounded. I don't think i'll really need it but I wouldn't mind it working just in case. Thanks Edit: I figured it...

    Noobie from Sydney Australia

It sounds like the OP is simply worried about the meat getting over done while asleep. With the HeaterMeter there are several options to either lower the pit temp when the meat is done or you can simply have it alert you that your meat us done and you can wake up and take it off. It can be set...

I closed the top vent and it made the fan run a bit more, max output was maybe 10%. I never went over temp so I'm happy with the holes for now. It is in the 20s outside so I may run into some issues holding a low temp once it heats up. I imagine at some point ill add some kind of damper servo...

I don't know much about the servo operation on the HeaterMeter but do you maybe need to invert the servo?

so how are you attaching your blower to the smoker

I hooked my blower up via an "air burner" to my WSM. I drilled a hole in the middle of the bottom and used a threaded copper fitting to hold the burner in place. It's harder to find a nut that fits that then you would think. I just pounded a 3/4" elbow into a rectangle and taped it to attach...

Thanks. I do have it pretty well sealed up (still some leaking but I don't think it's possible to seal it up 100%), I have a gasket around the door and under the lid. I do have the top vent 100% open so I may be able to close it down to make sure there is not too much draft. I figure if it's...

Playing with my new toy, I have my HeaterMeter hooked up to my 18" WSM via an "air burner". Thanks Ralph Trimble for the advice on the air burner. Testing it out on a beer butt chicken All default settings HeaterMeter

    Thermocouple probe location

I just built myself a Heater Meter and plan to install a thermocouple probe onto my 18.5" WSM and was wondering where people think would be the best location to mount it. I could mount it into the lid so it would work similar to the thermometer or I could install it into the body like between...

    Boneless Pork Chops

Cooked up some pork chops tonight. Put on a bit of dry rub I had left over from a pork butt a while back. Started them on the WSM. Cooked them for around 20 minutes at 275 till they got to around 140 degrees. Did this to add some smokey flavor At 140 degrees ready to go on the Genesis to...

    Hello from Central Ohio

Hello, just signed up a few days back and figured I would introduce myself. I have done some lurking on TVWB over the past few years, mostly the cooking topics and some research on the forums. I currently own a 18.5" WSM, a 22" original kettle and a Genesis E-330. Before these I had an older...
