    4 hr butts as good a low/slow

    HH Pork Shoulder

    Thanks for the replies. I made this just as Jim does his and it did come out great. Foiled at 160 and removed at 205. Temp was around 335 to 350. The only thing I might try different next time is to inject.

    Pork Butt Quick cook

    I need to make a Pork Butt for PP on saturday and plan to try the Quick cook method listed in the cooking topics. My question is after cooking in the foil and getting the internal temp up to 190 or so can you then unfoil and place back on the WSM and get some more bark on it?

    Placement of Temp probes

    Santa brought a Maverick thermomter for xmas. My question is do you place the probes so that the cover of WSM sits on the probe wires. Also I do not have any table or shelf on my WSM, will the sending unit get damaged if hung on the WSM or does it need to be placed away fron the smoker.
