    Pork Feather Bones

Andrej, How do you cook them? They go in the trash along with the breastbone and brisket unless I throw them in the spaghetti sauce. Jim, At the wide end of a slab of spares are a few thin bones that are softer than the rib bones. db

Maggots? I have a stainless steel pan about the same size as a Brinkman pan. Got it from a nurse. It used to be a bed pan.

    Temperature Differentials

Ray, The water in the kitty dish is contantly evaporating. Changing water from a liquid state to a gaseous state requires energy in the form of heat, so the water is cooled because of the reaction taking place. At least, that's my theory.

Any advice on keeping the temp low in my relatively new WSM?

If it's running too hot, the updraft in the bullet is drawing air through the joint at the bottom and mid section. Clean the bottom lip, go to your nearest Big Green Egg dealer and buy a felt gasket for a large egg. About 12 bucks. It has adheasive on one side. Wrap it over the lip of the bottom...

    Sand in the pan

When I use sand, I fill the pan about one third full and push the sand up the sides so there is about a one inch layer. Then I place some foil on the sand to hold it in place. Top it with one more layer of foil. I don't use sand as a heat sink/stabilizer, I just want it to act as a heat shield...

    Temperature in meat wouldn't raise

This is what a butt's internal temp might look like over a 225 deg, 14 hour cook. If you cook at a higher temp, the stall will occur at a higher temp. Let's say your pit temp is 275, then the stall might be around 170. butt temp

    Crispier bacon on ABTs?

Jon, I had a disagreement once with a buddy about abt's. He puts pulled pork in them. I said that there would be less room for the good stuf..the cream cheese, and that they might be better without the pork. We cooked them up both ways. I was wrong. I couldn't taste the pork but I thought it...

    Best wood for Brisket

I think, in competitions, a good idea is to play it safe. Hickory is a great flavor with brisket, but can overpower the meat if I'm not careful. I use other milder woods to keep the smoke going throughout the cook after I'm done with the hickory. Sraight cherry gives a nice sweet flavor to a...

    Country Style RIbs

Andrew, It depends on the the ribs. Country style can be cut from the shoulder blade or the loin section. If they were cut from the loin section I like to grill them like a pork chop, 350 deg or so for around 45 min. If they were cut from the shoulder, 250 for around three hours or until they...

    Best Thermo to buy??

Bill, The insulation on the wires I have are good to 400 deg. f. I don't stick the wires in until the meats are past halfway done. The wires go in easily then. Paul, The thermocoulpe wire has a connector that plugs into the thermometer itself. You might have seen a module that you can use if...

    Best Thermo to buy??

Bill, 80PK-25 SureGrip™ Piercing Temperature Probe on the Fluke website. I've got one but I rarely use it. I just stick the thermocople into the meat or wrap it around a grate. They are cheap and last forever. I use two or three and leave them stuck in the briskets and butts. You can check the...

    Best Thermo to buy??

Paul, If you need a wireless thermometer with alarms then disregard this post. When I first started bbq'ing I bought a Fluke 51 digital thermometer for around 140 bucks. It's nothing fancy, It just reads temperature using a thermocouple. The temp range is -328 to +2500 deg. It is a high...

Pics of WSM Piedmont Double Water Pan Mod and Detailed How to Instructions.

Jonny, They tasted the same. I didn't put the dry ribs back on. It was time to eat... It makes sense to me that the wet cook was faster. Moist environment means more efficient heat transfer. I wouldn't trust in one experiment though. I need to repeat the same experiment a few times to see if the...

Pics of WSM Piedmont Double Water Pan Mod and Detailed How to Instructions.

The pit had to go to pay off credit cards. I had too much fun over the last two years. I've been using bullets at contests lately anyway. Strange thin was, I bought the big pit so I didn't have to clean up 21 separate pieces of bullets after each contest. I just ran it through the carwash. Now...

Pics of WSM Piedmont Double Water Pan Mod and Detailed How to Instructions.

Cesar, It's a sad day for me. I sold my big Oklahoma Joe trailer offset pit this morning. It was a great pit. When my wife wanted a second child I told her she could have one if she bought me that pit. sniff... Anyway, in the big offset, we used a water pan sometimes for overnight cooks at...
