    I agree with Mikey. I usually let my coals completely ash over before I start cooking. 30 minutes in the chimney usually works for me as well.

    Butt 1.19

    Here in southern Illinois I get mine from my local butcher shop for $1.49/lb any day of the week. They always shave off the fat cap before they weigh the meat, which is a great bonus!!

    rib rack

    I use the newest Weber rib rack. You can get 4 full racks of baby backs in each one. I smoked 8 racks a couple of weeks ago....4 on the top and 4 on the bottom. About $14 for a Weber rack.

    I agree with you, Bryan. That's a lot of lit briqs to start out with using the MM. Try cutting back (maybe half) on your lit briqs when starting up.

    I agree, Troy. The thermopen works great with anything you want to cook/smoke! And, it couldn't be any easier to use.

    ET-73 Switch

    Got my ET-73 yesterday. I'll give it a try soon. I can now use my "other" ET-73 to monitor temps of meat on the bottom grate! I'm glad they sent the right one this time.

    First Butts!!

    Smoked my firt butts last night. 2 butts totaling 11.5 pounds took 9 hours smoking at 225* to reach an internal temp of 205* Used 3 chunks alder and 3 chunks cherry. AWESOME!! The butts practically fell apart themselves! Cooked a turkey, ribs, and butts so far. Gotta try a brisket next. I LOVE...
