    Rib Roast Trim Question

I have never cooked one of these babies before...If it was Chris that posted those recipes...WOW, a big hit. "Best rib roast ever" was the general consensus! I prepared the Herb Crusted recipe. My 9 pound roast cooked for 2 hours and 45 minutes at 360 degrees. I took it off at an internal of...

Flavor from other stuff inside the WSM?

I second Keri and Shawn. I have cooked the Cardogs Salmon as well, and people have told me it is "The Best" salmon they have ever eaten. Being in the Northwest, that says a lot for the recipe! Never noticed any lingering smell or flavor afterwards either.

    Turkey Fryer Recommendations?

Besides the 24 wait after injecting, is there any other secret? The couple times I have tried it (only in Turkey so far) it has ended up in streaks or pockets of flavor? Is that just the nature of injecting? Too many people like this, so I am thinking I need to give it another go.

    Turkey Fryer Recommendations?

Bruce and Jane, I love my pump too! When I bought it at Lowes it was about $16.00. A couple things, it filters the oil much faster when its about 100 degrees, the cooler it gets the longer it seems to take. Also, don’t let that baby run dry for long at all or it will burn out quick. It...

    Turkey Fryer Recommendations?

Hmmmmm, I don’t know about that...of course I'm no Dr. My Internet research and my own experience make me feel good about re-using the oil for a while. I have used it for three months during the winter when it is easy to keep cool. No doubt, it is easy to tell when it has gone bad, visually...

    Turkey Fryer Recommendations?

My steamer basket was $19.00; Lowes in our area sells them for that price as well. I use my oil for several months...I have never actually counted the uses. The cheapest I have found it is $17.00 for three gallons at both Target and home-Depot, on sale after the Holidays. I use a Pump to...

    Turkey Fryer Recommendations?

Hi Jane, the AB brine I was talking about can be found in this web site on the home page, click on the "basic brine" topic, then "All About Brining", then click on “Recipes to get you started" then scroll down to the Good Eats Brine. It calls for 1 gallon of Vegetable Stock, which I guess by...

    Turkey Fryer Recommendations?

No problem. My in-laws just bought a place at The Gallery, some golf resort 20 miles north of Tucson. I am guessing the wife and kids and I will get to visit there next year. Looks like Tucson has some good eating spots. I have always brined mine and they come out awesome. I have had the...

    Turkey Fryer Recommendations?

Try Economy Restaurant Supply Inc, 712 N Stone Ave 520-624-0301. They call them steamer baskets, and they have a 30 QT for $30.60. A lot more than I had to spend up here, I am sure with some searching you can find it cheaper down there. We have several commercial kitchen supply stores in...

    Turkey Fryer Recommendations?

Jane, do you have a kitchen supply store in Tucson? That is where I purchased my 30 QT. colander ($19.00) as well as I found a nice 5 gallon food safe bucket that has a snap on lid as well as convenient measuring marks on the side ($12.00). The colander is nice for both the wings and smaller...

    Turkey Fryer Recommendations?

Mordechai, I have had a fryer now for 3 years. I bought it after the Holidays at Target for $25.00. We have loved it and use it all the time with no problems. I think the deal is drink AFTER the cook and don’t drop the bird into a full pot of oil...just like you wouldn’t drop something...

    Stuffing for Turkey

Keri, your Turkey and Stuffing were HUGE hits in my home! Thanks so much for all your help. I ended up doing the basic corn bread, and out of respect for your grandmother, my wife made it up fresh and cooked it right before dinner. We doubled the recipe and not a bite was left...even my...

Keri C's Apple Juice Brined Turkey

Thanks all for your patience...So I have two chimneys of fired up Kingsford, I dump them into the Smoker with a foil lined, empty pan. Do I immediately put the wood on, assemble the smoker, and with bottom vents all 1/2 open put the Turkey on. Is that how I will cook the Turkey at 325-340? I...
