Ribs are done when you can stick a probe through the meat and it goes in like a warm knife through butter.

I have two thermoworks probes and they seem to bounce in between a 4 degree window over and over again. Looks like a sine wave or something similar. My ET72s do not exhibit this behavior.

Well with my new found electronic soldering skills I figured I would open up the power adapter and take a look. Turns out there was a loose capacitor that may have been causing the problem on the PCB of the power adapter. I soldered it back on and what do you know it seems to work every time...

When the drums are about done you can take off the middle piece of the WSM and put the grate directly above the coals. This will crisp them up nicely. Just be careful to not burn them.
