    When I cook for myself or friends & family, I don't inject, brine, layer rubs, finish rub, mop, nor scrape. Comp BBQ to me is one-bite BBQ. I overload my food with complimenting flavors and hope for the best.

    I've been able to maintain a 22.5 WSM with a full ring of charcoal (with the outer portion of the ring of charcoal stacked up to the water pan) at 250º for 17 hrs. with a Pitmaster IQ 110. I used no water in the pan...foiled only.

    Those look like Weber fireplace handles and not Ranch kettle handles. They are less expensive too. When I purchased them they were 2 handles for $16.00. The Ranch handles were like $12.00 each and not wood.

    To avoid rubbery skin, you should try removing the skin and then scraping the fat from underneath the skin. Then just lay it back over. That's a popular way to get bite-through skin in competitions.

    I agree, but seeing how the pork is going to hit ~200º it might not be a big deal. When I cook chicken with anything else in a single WSM I try to either put it below or on the side (if they're on the same level).

    I loaded up fat on that $5.88 on twin 13.9lbs. bags. I took home 20 and just finished the last bag at the comp in Long Beach this past weekend.

    Lowe's in San Diego has them for $9.99! I picked up 4 twin packs. 2 in self checkout and then I went back in and bought 2 more in a reg. checkstand. I'll go everyday this week to get more. I want to stock up for about 12 months worth. Also, Cowboy hardwood lump is $9.99 for a 20lbs. bag.

    How can they stop you from buying 2 more later in the day? You can go through self checkout and then go through a reg. checkstand a few min. later. Then come back later in the day and do it again.

    Thanks. We really try to do our best, but 2 walks in each of our first 2 comps this season has been stunning for us. We couldn't imagine being able to throw down with such great cooks in these contests and we did okay. We count our blessing every comp because we know DAL can happen to anyone.
