    Yes tie them. Have a roll of twine on hand. Otherwise you will get some "flaps" of meat hanging out that will get too done.

    Goodwill itself is overpriced junk most of the time. There are lots of copy cat thrift stores with more reasonable prices. I get all my knifes at these type of stores. You have to look for the quality ones. I have gotten tons of deals from them thrift stores. I have never seen a weber grill...

    Weber dont have to do a cart. It would be nice though. I often have wondered why any company dont make them? That kind of thing would package nice because you have no charcoal grill or smoker, just a cart..

    You can always use a weber kettle and do pulled pork indirect too! I bought my wsm from Amazon for 180 bucks like over 10 years ago and it still makes great bbq. I only had to get another charcoal grate because it got warped and let coals slip thru.. Save your money for a wsm.

    Make yer own "portable" out of an unused 18 incher. That's what I did. Dem so called "portable grills" like the go any where and regular smokey joes are not big enough for real tailgating and they do not make the Jumbo Joe any more.

    It all depends on yer budget! Try some off brands of whatever is available close by yer pad! I found an off brand made by royal oak for 5 bucks for 18 pounds. I buy kingford when on sale otherwise a grab a bag of the cheap stuff every time I shop at Sav A Lot.

    I like them brined for an hour or too, no more so they not to salty. Then grilled crispy. No oil to mess with. Deep frying is prob. the best way overall. I just hate messing with the oil.

    I believe that is Au Jus! Save all yer meat drippings and let them cool completely in the fridge or freezer. The fat will come to the top and harden making it easy to remove!

    Yep, Im like Mike. I live in Michigan and it is COLD at night also all winter so I finish pork butt and brisket in the oven all the time. I run how ever much coal I have in the WSM cooker then foil and cook in the oven..

    After a few more cooks it will get more "seasoned".. Nothing wrong at all. Like these other smokeheads already said, just clean yer dome lid under neath with a piece of balled up foil so flakes do not get on yer Q! Also clean yer grates, duh right!
