    Decisions, Decisions

I shudder to think how many bought an ECB and just threw up their hands and said "Screw it! I can't BBQ!" I have had 3 ECB's. They were electric though so much easier to control heat than the charcoal version. Can you turn out good Q on a ECB, certainly. Is the WSM easier and tastes better using...

    Back to Basics

How many of us are self-training? I reckon to guess most of us didn't grow up with our Grandfathers and fathers teaching us real Q. I know I didn't. Plus I don't have the time to BBQ 3 of 4 times a week. I use a digital probe for the temp in the WSM and except for ribs I use a probe to keep...

    BBQ with Bobby Flay

Then you just ain't had good beans yet! Oh, and Bobby Flay dont' know Q from Shinola!

    BBQ with Bobby Flay

Next time you make beans put them in a disposable pan or one you don't mind getting smoke on (or should I say your wife doesn't mind getting smoke on . Place them on the bottom rack and let your butt/brisket/ribs on the top drip on them! Just a little trick I picked up on the BBQ forum. I would...

Need help getting high temps in the WSM

Just a thought, you might try using lump charcoal. It burns quite a bit hotter than briquettes. It does burn faster though.

    Turbinado Sugar vs. Brown Sugar

Keep in mind if you are drying brown sugar it will not taste as good as when it was moist. If I was mixing up a one use batch of rub I wouldn't worry about using brown sugar, but if I was making enough rub for several smokes(which I always do, if you make rub you might as well make a lot) I...

    BBQ books?

I have both of Paul Kirk's book. His new one "Championship BBQ" is even better than his first one. I would reccomend both those books. Also Kansas City BBQ Society's "BBQ, it's Not Just for Breakfast Anymore" is a real good BBQ book too.

    Brisket - Frozen, OK?

Even if it still frozen in the center it would be ok to go ahead and smoke it.

    Crispy skin beer can chicken

The last beer can chicken I did on my WSM I did at about 250 and the chicken skin was somewhat crispy. It turned out a nice golden brown. I don't eat the skin though, so I peeled it off.

How to transport a WSM? Can I use a hitch-haul?

If you lay it down you could wrap it in a blanket to prevent scratches.

    Non-Kingsford charcoal

Maybe you could pick some up in Buffalo. I don't know if there are any restrictions to bringing it over the border but they will let a few bags slide, won't they? Just go to Wal-Mart, Home Depot, Lowes, even most grocery stores carry it, just cheapest at the big discount places.

    First Time Picnic

I trim all the fat/skin of the outside of picnics and butts, never had a problem with it being dry. I believe there is enough internal fat to keep it moist and I like to get the maximum amount of bark. I have notice picnics seem to be a bit drier than butts in general. My guess it because of the...

    Temperature Issues

Hmmmmmm........ I've had the opposite problem, I have trouble keeping the temp under 240. Just a thought, have you gotten all your charcoal from the same supplier? Maybe they had a batch that got wet or something, or they don't store it properly. I know Houston is a wet and rainy place. Maybe...

How long can a brisket sit in the fridge

Yea; it will be fine in the fridge for a week. Heck, if you froze it now you would have to take it out a day later to thaw it! I have even heard of folks leaving it in the fridge up to 4 weeks! Personaly I would feel comfortable keeping a brisket in the fridge up to 2 weeks if it was in cryovac...

    whole chicken

That moist towel is a good idea, I'll have to try that next time I do a turkey. On to the chicken, I always brine my chicken. Last time after I brined it I rinsed it real well and patted it dry with paper towels. I stuck in on a beer can, a nice cheap natural lite. I smoked it about 275 for...

    Water Pan Gap

I love that Brinkman charcoal pan used as a water pan. I don't like the water pan the WSM comes with.

    Renowned Mr. Brown Question

I never mop. But usually after I pull the butt I throw it all in a big frying pan. I mix a cider vinegar sauce I make (the sauce contains no water, just staight vinegar) with water at a 3 to one ratio with water (3 parts water, one part sauce). Enough to cover the pork in the frying pan,and I...

    Turkey and Rib Help

I like Tylers idea too. And if you have a grill, you can fire that bad boy up to finish your ribs when the turkey is ready. Even a gas grill, they're already smoked!

    Wild Grape Vine

So what's your address? I happen to be in New England right now. I'll take them off your hands for the low low price of free!

    kingsmoke vs. bbq galore

I don't know about the lump charcoal, but as far as BBQ Galore wood chunk selection it is pretty good. I don't have one where I live, but I drove down to Dallas once for work. I loaded up my poor Camaro with lots of wood. I know they carry Alder, Oak,Cherry,Apple,Pecan, and of course Hickory and...
