Peg Leg Porker is on my list for Nashville. I haven't found many recommendations for Chattanooga, but if I don't find anything better, may just make a route adjustment and an early pit stop in Blue Ridge GA to Trip Advisor's #1 Rated BBQ at Joes BBQ.

My understanding is that you can remove from the meat, but you can't add anything prior to inspection. (I've never competed.)

Is that normal? I see that probe0 is a different color than probe1,2,&3. Does that account for the temperature offset I noticed when I moved the probe from probe1 to probe0?

Also, noticed that the same probe is 51º cooler than it was in "probe1".
