    Chattanooga & Nashville BBQ stops

Peg Leg Porker is on my list for Nashville. I haven't found many recommendations for Chattanooga, but if I don't find anything better, may just make a route adjustment and an early pit stop in Blue Ridge GA to Trip Advisor's #1 Rated BBQ at Joes BBQ.

    Chattanooga & Nashville BBQ stops

I'm heading to Nashville TN mid-November. My wife "tasked" me with finding our barbecue stops in Chattanooga as well as Nashville. (See my route below.) I'd love some input from the masses as to the places that can't be missed. https://goo.gl/maps/2wc6dqiNdF42

    Prep Lollipop Chickens

My understanding is that you can remove from the meat, but you can't add anything prior to inspection. (I've never competed.)

Anyone been watching BBQ with Franklin on PBS?

I don't remember where I saw it, but I'm pretty sure he competes under "DOUBLE NICKELS ON THE DECKLE".

    Silly Butter Question

I think the idea is margarine seems to hold up to the temperatures better.

Adding Ribs at the end of a pork butt cook

I like to rest pork butts after cooking them, but I've pulled and served right off the smoker and it was still good. (It did seem to dry out faster though.) Keep in mind a rest time for your butts when you put your ribs on. I'd probably want the ribs going on about the last 2-3 hours of the...

so how are you attaching your blower to the smoker

I don't have pictures, but I have a squirrel-cage fan connected to a pet watering bowl affixed with a toggle bolt through it into the WSM (as was described in an earlier post on this thread). I sharpied* around the outside of the fan's face onto the flat side of the bowl, then dremeled* an X...

Free (semi-crippled) 4.2 heatermeter to who wants it

It held at 275°F for a couple of hours. I never intended this to be a long cook, so it started running low on charcoal shortly after that. It was long enough to see that it would hold temp, that my probes aren't calibrated well, and that something funky happened that suggests I **might** need...

Flashed it to the newest, then upped the setpoint higher (since it'd already climbed above 250) and its working!

Also, if it matters, HeaterMeter version 20141003B, ...though I'd have to figure out how to get new code if that's needed.

Free (semi-crippled) 4.2 heatermeter to who wants it

I think I was trying to describe here, the same thing you're telling me to do. I've set probe 0 to be disabled and as long as it disabled I get no output on the fan. You can take a look at what I've got at http://ficklin.afraid.org:5000. Probe1 is at 224, probe2 is at 229-ish, and the...

PSA: Don't charcoal barefooted. The sound of your foot cooking isn't something that's easily removed from your head. Also, I just ordered a thermocouple.

So, I won't even admit to what I thought was probe0. I'll say it wasn't right though. Now that I realize that probe0 is next to probes 1, 2, & 3, I see that its got a different kind of connector. Apparently this board's set up to use a thermocouple pit probe. ...That I do not have. Is there...

Is that normal? I see that probe0 is a different color than probe1,2,&3. Does that account for the temperature offset I noticed when I moved the probe from probe1 to probe0?

Also, noticed that the same probe is 51º cooler than it was in "probe1".
