I think that the warnings about concrete are actually about using the chimney starter directly on the concrete surface. I've used the WSM on concrete with no problems - I currently have it balanced on broken cement blocks below my deck. Very upscale.

I went to WalMart last Saturday looking for a brisket. They had them, of course, but all of them were enhanced with up to 8% solution. I could have sworn that they used to not have enhanced beef briskets. I skipped it and got a flat at Sam's instead.
I just smoked one last weekend with 2 chunks apple and 1 chunk cherry. Man was it good. That said, if you don't have apple or cherry, I think hickory or pecan would be okay if you go light on the chunk amount.
I saw part of the show (it's on past my bedtime) and it did look great. When I saw what they were doing, I immediatly thought of the Mojo Picnic recipe that is in Dr. BBQs cookbook. I've been wanting to try that one, but I have't gotten to it yet.
