    Bucket

An oderless large kitchen trash bag (new obviously) works for me. I put the back in the bucket, drop the bird in and pour in the brine. I've never had issues with it.

    Back again!

I'm so glad to be back on TVWBB! I was tempted to go to the dark side and buy a big stick burner up until yesterday and my wife brought me to my senses. Well a mistake in buying a used trailer that is too small for one helped...anyway my wife bought me 2 WSM 22.5"s for my birthday. I've...

    Brisket help....

You'll be just fine. Rub doesn't stick to fat so you'll get a great bark. Like Bob said it doesn't add moisture. I'd inject with the grain of the meat with some beef base and aus ju. It'll be tasty.

    Stoker in competitions

So I fired up the smoker and Stoker this weekend. The cook was relatively short. I did not get the Stoker log setup so I have no data. That's coming on the next smoke. Here's how it went: - 18.5" WSM w/Eyelets as the only hardware mod - Water pan foiled on the inside - Clay pot base foiled...

    Injecting Ribs

I would be concerned about the flavor overpowering the taste of the pork. Like Mark said brines and marinades aren't uncommon. You may want to start there before reinventing the wheel. That means a few test runs in the backyard before a comp...something that I am horrible at but need to do if...

    Injecting Ribs

Only having done 4 comps I won't claim to be an expert but I have not and would think it would end up making the ribs mushy. There are plenty of ways to keep your ribs moist and tender.

    Stoker in competitions

Amir I didn't have Stokerlog running unfortunately. I had some trouble getting the old Linksys router working and didn't have time to deal with it. I will be doing some testing in the next few weeks hopefully with the Stokerlog running. It was great to have the stoker at the comp because I...

    Stoker in competitions

I know there are quite a few folks using Stokers in competition including myself. I'm trying to determine my best setup which will probably come with loads of trial and error. Overall, I'm really happy with the Stoker and how it performs. I'm running into issues however and want to get some...

    First Comp Question

Derek one thing I learned at my last 2 comps (which are only my 2nd and 3rd total) is to start making up your boxes for KCBS the night before and keep them cool and spritz them with some water. Our first comp we tried to build the boxes with curled parsley between each turn in time. Combine...

    A lesson learned

As a follow up.. This past weekend we competed in the Wine Brew and Bar-b-que Too contest in New Palestine, IN. It was great to see Ron from the Rib Runners and loads of other things. It was equally great to follow our plan much better and get a call in chicken along with a call in sauce...

    Stokerlog Version 6

Well I'm happy to say that after reinstalling Windows 7 (not SP1 yet) I'm able to run Stokerlog just fine. I will try to upgrade to SP1 at a later date but for now, it's not that important. I want to get to work on Stokerlog...I do enough Windows admin work during the day... Amir thank you...

Peter what version(s) of .Net do you have installed. This is driving me nuts not being able to use Stokerlog on this laptop as my only other laptop is running Ubuntu.

    Stokerlog Version 6

Amir, It looks to be an issue with Windows 7 SP1. That's my best guess at least. Installing it on the same setup w/out SP1 works just fine.

    Stokerlog Version 6
