    Spares in two hours?

    I've done STL cut spares in 45ish mins @ 450° on my Performer a couple of times. This method won't win any comps, the ribs are nowhere near as good as lo' n slo'. But when you have the shakes from 'que withdrawal, and you need a quick fix, they sure hit the spot!

    Troy: I was in a similar situation, so I made my own ash catcher bar. See http://tvwbb.com/eve/forums/a/...023/m/6241057706/p/1 I tried to take pics of the measurements I used. It was pretty simple to fabricate, and has been working very well.

    My vote goes for no. The Thermoworks RT600C is about $25 on Amazon and works great. You can buy 3-4 for the price of 1 Thermapen. Same manufacturer, so quality should be equivalent.

    Which gasket did you buy from Amazon? There are different ones available for different cookers (BGE, Primo). Also, what adhesive did you use? The problem is with the the way the pot sits on the bottom SJ bowl - that's where I see the smoke leak from. The vent holes don't seem to be the issue...

    Can I make my own "redhead" ?

    No good options that I know of yet. Duplicolor engine red is good for touch-ups as is the red from Krylon (so I hear). The Duplicolor is rated to 500ish or something and turns black after a few cooks. If you hear of anything please post.

    first, how were the tuna steaks? That's impressive. I can get my brick pizza oven up to 1000+ but it takes a while. Pizzas will char in <1min. I now do the pizzas at about 700-800. I would have imagined that it would take a lower temp to do tuna. I'm sure Weber will send out the replacements...

    Cheap mod: heavy duty foil gasket to seal up the gap. More durable mod: I have read about people using rope gasket stuck to the ring to seal any gap. Search/google and you should find some good threads.
