    Standing rib for Christmas

Kevin, I've got a 7.5 and 6.5 rib roast dry aging right now. I was going to do the low and slow with one being med. rare and the other medium. However, I'm now thinking empty water pan or gasser for both since I can get the range of doneness for the 17 guests preferences. If I put the smaller...

    Turkey Giblet Gravy

Bill, you can also roast your veggies, giblets, neck on the stovetop and deglaze from that pan. Chris' recipe is good for the oven since there is minimal fat involved and less (if any) skimming required to remove since Pam is used instead of oil.

    Apple-Brined Whole Turkey

Greg, imagine you are lying on your back at the beach with your hands at your sides. Now, raise your hands over your head and put your hands behind your head. Your forearms should now be perpendicular to your body and your upper arms should form a triangle to your body. Same thing for the bird...

    Roadside Chicken

Rita, I think a quick brine would be fine. Isn't the main purpose of the brine to ensure that moisture stays in the meat? Cooks Illustrated recommends 1/4 cup salt, 1/4 cup sugar and a quart of water with a 30 minute marinade for chicken breasts. However, I've also seen them recommend 1/2 cup of...

    Weber Charcoal Chimney

I used the side burner on the Weber Summit today to light the chimney for the first time. I took off the metal ring and placed the chimney right over the burner on high. Five minutes later I moved the chimney to the charcoal grate and let it finish burning off there before pouring into baskets...

    Help with chicken

Out of curiosity, did you rinse your chicken after brining? If not, that may have left too much brine in the skin which MAY have led to the skin shrinkage. I'm only guessing though...

Dave, have you tried beer? Start slowly with once can and if the paranoia doesn't subside, try another then another!

Williams Sonoma Rib Rack @ $5.99

I went back to WS today and the racks were at $3.99. I had bought mine when they were marked down to $8.99 each and bought two at that time. Luckily, I haven't used them and I still have the receipt so I'm going to return them. In the meantime, I bought two at $3.99 each. I also checked out...

Williams Sonoma Rib Rack @ $5.99

Russell, you probably will get better overall coloring. Any areas where the meat overlapped with the skewer method would not have the rich mahogany color from the smoke. I'm sure there is no taste difference!

    Maverick et-73 mod

Just tested my new Mav and I have about 20 feet of range with line of sight transmission. No reception beyond that.

    Spice Grinder

Kevin Kruger what type of pepper do you order from Penzey's? You suggested a spice/herb list for me a week ago but I'm overwhelmed by the decisions I have to make on the Penzey's website!!!

    Larger water pan

Rick, like you said "every 3-4 hrs will do." The main reason is for overnight cooks so that you can get some sleep and not worry about the pan drying out and the temperature spiking. I agree with you that if you're at home (and awake) during the cook refilling is no biggy.

    Kitchen Shears

Thanks for the help. I stopped by the mall today since we had dinner there and I found this pair from Anolon. It was on sale at Macy's and I picked it up for $29.00 out the door. This is the best shears that I've seen. The blades come apart, it has a rubberized handle to prevent slipping while...

    Larger water pan

Tom, I just received two pans earlier in the week and I have to agree with you. I had an ECB (with the hole in the charcoal bowl) and it as much sturdier. However, I think the current pan will work fine as a water pan. I bought two just in case. I could always double them up.
