    School in session

My youngest daughter (9yo) Saturday said she wanted to start learning how to cook. Sunday, after I picked her up from visiting her friends, I asked her what she wanted for dinner (hamburgers) and if she wanted to help (yes). Since two of our five were gone, and the burgers were the only thing...

    Fall is for soup

No specific measurements to call it a recipe, but I make beef stew quite frequently in my 9 qt. I kind of eyeball it, but below is roughly what I do. Preheat oven to 250F Preheat the dutch oven on the stove top (med. high) while cutting ingredients Cut about 8-10 red potatoes into ~ 1"...

Temp control: adjust top or bottom vents?

So three pages in and there's still not a consensus on the answer? I've been trying to think through the fluid dynamics of it and how the air would flow (thinking of both volume and velocity). Fresh air will only enter into the grill as fast as the old air leaves. So if you close down the...

My team is 1-1, but I really don't know what to expect with the late retirement of Luck and the kicking woes of Vinatieri. Going to be interesting.

Packer brisket on Weber kettle advice

Didn't see this until now, so sorry I'm late. I have not smoked a full packer, but have done brisket flats, pork butt, and pork shoulder on the Master Touch using the snake method. I have been very pleased with the process and end product. What did you end up doing and how did it turn out?

    New Wok

As noted in my Chicken Stir Fry post, I needed a larger wok, and got a nice 16" carbon steel one. Instead of showing pictures of a cook, I have some pictures of me seasoning the new wok. Getting everything ready for the process With the vortex upside down about half full of charcoal, it's...

Anyone watching BBQ Brawl: Flay V. Simon on Food Network?

I have not seen it and have no plans to. As far as competition cooking shows go, I loved the Iron Chef (the original from Japan), and watched a few Great British Bake-off episodes when my wife was on a binge with that. Otherwise, I don't much care for them. I haven't even watched much in the...

    Cord Cutters - - - -

Antenna in the attic for locals, tried Hulu Live for a while but switched to YouTube TV and like it better (though we kept the bare minimum hulu), Netflix, and Prime. Was with DirecTV for ages and the cost was getting way too high, switched to Comcast/Xfinity and saved about $80, then last year...

    Chicken Stir Fry

Holy Wok Batman, that site has some good deals. Ordered one from there along with a wok spatula. Even with shipping charges it came out less than the same wok on Amazon with free shipping. Thanks for the link.

    Chicken Stir Fry

It's 11.9" diameter. Just don't want a wok to sit so low that it's on top of the vortex blocking airflow. I'm probably overthinking it and don't necessarily need to use the vortex for this, in which case, sitting lower will be fine, and maybe preferable.

    Chicken Stir Fry

Not to turn this into a question/help request that belongs in another thread; that one is flat bottomed and 10", I think. It, minus the handle, goes completely through the opening in the grate, so I just use the vortex under it and set it on the grate. I want one that sits in the opening of...

    Chicken Stir Fry

I think I need a bigger wok. Anyone know which size will fit best in the gourmet bbq system, 14" or 16"?

    Weight Capacity?

Apologies if this has been covered elsewhere, but my searches came up empty. What is the weight capacity of the Weber Kettles (I have the Master Touch 22")? Would it, for example, handle a Lodge 9 qt cast iron dutch oven (~22 pounds) full of chili or gumbo?

    bluetooth temp probe

I have the Weber iGrill 2 with Bluetooth. I like it, as well as the app, quite a bit. But I do wish the range was a bit better. I can go inside the house to the room(s) on the same side of the house as the grill, but not really any farther. I can sort of stretch that a bit; if I leave my...

Spiral-Sliced Hot Dogs for Independence Day

I did this Friday night when it was just me and my 9 yo daughter, thinking she'd love it. She did, to look at, but then said that each bite "felt" different, and asked me not to do it again in the future. Kids... Personally, I found that the chili sauce stayed in place better with the spirals...

What to do while the pork shoulder is smoking...

For the last two years, I only had a Smokey Joe and Q1200 for grilling and an electric smoker. I missed being able to add the corn on the cob, potatoes, etc. on the grill while cooking, and my electric smoker is about to die, so I got a Master Touch this spring. Not only can I now cook whole...

    Tepache

Looks good and I think I may have to try this. I have a few questions, if you don't mind. No yeast necessary? Have you let it ferment for longer periods (weeks) and how much does that change the flavor (I assume it loses some of the sweetness)? And lastly, unrelated to your tepache; glass...
