Never planted Garlic. Do you just plant a clove in the ground, kinda like potatoes?

So, how many pounds of charcoal do you have right now?

I bought a skid full at COSTCO, (36 bags), and then a few weeks later, was at a clearance liquidation centre, and they had the same stuff for $10/bag, so I bought all that they had.

So, how many pounds of charcoal do you have right now?

    Whole hog advise.

I have done a few hogs, however I dont know if I am much help. The butcher always brined, stuffed and wrapped in foil for me, then I run a high heat cook, about 6-8 hrs to cook a whole hog. But it has always turned out great. I use a spit with a motor/gearbox that does 4 rotations an hour.

    Hello from Cambridge, ON Canada!

Welcome Derek. After you get it put together, head to COSTCO and get some Basques Natures Own Charcoal for this thing. Good luck with your cook.

OK I have a pork question....

Or if you prefer, just trim the skin and smoke like normal and pull when tender.

    Minion w/ lump

I always use the minion method, and I always use lump in the WSM

OK I have a pork question....

Picnic is the lower portion of the shoulder. The butt is the upper part of the shoulder. The picnic will work just fine for making pulled pork. We do our own butchering on the farm, and I never split the two.

    water, no water, concrete.

I haven't used water in about 5 years, just a dry foiled pan, no problem.

    Competition site preference

I would take grass, for the tent tie down factor, but if you have sand bags to use, asphalt is ok as well. I have also seen people fill grocery bags with water and hang them as weights in a pinch when they couldn't tie down.

    WSM vs. BGE

I have a WSM, and a performer that I bought, and a Big Steel Keg, which is a slightly cheaper steel version of the egg, that my kids won at a comp a few months back. I paid less for both the WSM and the performer, than what you would pay for the BSK. I haven't done a lot of low and slow with...

Little bit of pie filling stuff (cinnamon, sugar etc..) like you mentioned should turn out o.k. This is my go to recipe for beans. You will not be disappointed.

    Beef Jerky

I did the jerky gun thing twice, and whole muscle twice. Dont waste your time with the cannon, go whole muscle

    Beef Jerky

I've done it twice, and did a minion method with vents essentially all the way closed, and was able to keep the temp low for about 5 hrs or so to smoke this.

    Beef Jerky

I have made jerky using the WSM twice now. I find a 5 lb roast (I use a boneless round roast), fully thawed, and then sliced(sliced just fine on my slicer) With this size of roast, and a third grill from an 18" kettle it nicely fills all three racks. I made a whiskey pepper ( which got burnt...
