after i pull off the food, i wire brush the grates and leave the vents wide open to let it keep burning off. (never get to reuse charcoal that way, but oh well...) the next day i come back and dump the ashes and then leave it alone all vents open

Yeah, pretty much. i had 2 closed all the way and 1 open just a bit for most of the rib cook, started getting a little hot so closed it all the way, then had to make some minor adjustments here and there. added another lit chimney before i put the wings on and left them all open for that...
