    First Smoke with some questions

I second the "on the rack" answer. I can't imagine putting any kind of pan into the smoker, just seems wrong to me (there may very well be a good reason, I just don't know what it would be). Top rack, lower rack, doesn't really matter as long as you have a way to safely move the grate (temp...

    North Carolina Style Pulled Pork

I tried this rub and sauce recipe this weekend. Turned out very good. The family wasn't too excited about the concept of a vinegar based sauce, so when I pulled the pork, I split 1/3 of the meat out and used the finshing sauce on it. This is my first experience with vinegar based sauces. Adds a...

Ends too well done? Cut in half or Roll up in circle

I've tried rolling but prefer my racks as I like to foil my ribs during the cook (I like the 3-2-1 method). Can't really do that when they are rolled, as far as I can tell.

    Quick overnighter

Hey all, first post here. I wanted to post a couple weeks ago when I did some spare ribs, but forgot the camera till it was too late So I picked up a couple small butts, just under 7 lbs. and just under 6 lbs. respectively. Rubbed them yesterday morning then wrapped in the fridge for the day...
