Andouille Sausage

Stogie, Nice site! Did you do that all yourself? A great alternative to people without grinders and stuffers, but I got all these cool toys for Christmas and really want to play... I'm lucky enough to have a butcher who will give me casings in any amount I need, all I need now is a good...

First time results - BRITU attempt

Stogie, Thanks for the advice. I understand it in the abstract, but until I get that WSM in my hot little hands, I won't have a true understanding. Chris's pics help a lot.

Stogie, Thanks, we have both stores here on Long Island, so I will check them out today. The rain has finally stopped...was starting to forget what the sun looked like...

    I'm a Vet!

In less than a week I'm now a veteran member...how sick is that...(Careful Gal...the obsessive side of you obsessive/compulsive personality is showing!) It gets worse...I am expecting my WSM any day, I have the week off and my plans for going away were canceled... I'm seeing TVWB Pro by...

    Andouille Sausage

Dean, Thanks for the reply. I'd love the breakfast sausage recipe. Don't worry about bulk, I can adjust the recipe for a smaller size. In a past life I used to do this for a living...

quote:
Getting one of those will be quite difficult: Little Red Bullet Project

Whoa....for a WSM owner, it's kinda like owning a Shelby! Very impressive! Maybe Weber was paying attention.

    Congratulations Chris, and Thanks!

Chris, This site has the content and polish of a truely professional site. I can't believe you do this in addition to a day job. If Weber had any brains they would woo you away and make it worth your while to make this your day job. (scary to think what you could do with all that time...)...

How do I use wood chips?

Mike, I can't answer your butt question as I am also waiting for my WSM to arrive, but I do feel comfortable giving you my opinion on fuel. If all you can get are chips, I soak mine in water, at least 2 hour, sometimes overnight. Make sure you drain them well or they will put out your coals...

    new user

Rick, Welcome! I am also new to the site...still waiting for my WSM to arrive. You will find the members here very gracious and generous with information. Sounds like your a seasoned vet with smoking. I have only had experience with my performer...not sure it's even official Q that way. I...

    5th Anniversary contest

Chris, I went back and read the history ect. of the site, great stuff! You've come a long way! I think "Bobby Crocker" is a little more appropriate, but it made me laugh! BTW, how did you get a red WSM, I didn't know there was a choice. My performer is red and I think the WSM looks great in...

    Andouille Sausage

Hey Dean, I'd like to pick your brain for a minute if I may. I have never made sausage, but always wanted to. We always have extra venison around, and sausage seems like a good thing to try. I got a sausage attachment/food grinder for my kitchen aid for christmas and haven't used it yet. Now...

    5th Anniversary contest

Gee... I just noticed this today, can't believe I missed it before. Great prizes Chris! Would love one of those autographed cookbooks (I collect em), however, if I won the WSM, I would send it to my brother in AZ...my sister-in-law would kill me...hmmm...

New Dual probe remote thermometer coming to the market

quote:
The probes are not to be submersed in water, but it is safe to wash them. Based on this, I doubt any condensation that results from hanging one from the dome will cause a problem. I think of them as air-bake cookie sheets --...

    New WSM Owner

Wes, Congrads! I looked at all your great pics, now I'm hungry... My WSM was shipped out yesterday...can't wait. What do you think was the problem with the ribs, not tender enough?

What are your favorite wines to go with your Q

I'm surprised that none of you cab lovers have mentioned a Shiraz. These beauties from Australia have become a new classic among lovers of meat and spicy food. 93,94,96,and 98 all seem to have been excellent harvests. Lots of names but will just mention a few...Rosemount Shyrah Balmoral...

New Dual probe remote thermometer coming to the market

Called the GadgetSource and ordered my Maverick, Whoo-Hoo! She said the original supply was exhausted but they have 35 more that can be shipped directly from another store, should take about 3 days for me to get it. Question: I read on one of the posts that on some of the digital thermometers...

    Grilla gloves

Can anyone tell me where I can purchase Grilla gloves? A large chain store that would be in NY would be best (WSM shipped out yesterday...counting down!) but online resources if nothing is available here would be appreciated.
