Identifying Different Rubs on Ribs

I save my deli containers and write the name of the rub on both the lid and the container itself. I've also written on Ziploc bags. Permanent markers are a Godsend.

do I need white oak for britu?

Brian, Congrads on your wise purchase! BRITU is a favorite around here and I am an avid fan. I have used hickory, cherry and apple wood all with great results (in 3 seperate cooks, not combined). If you only have access to chips Jim Minion suggests putting soaked chips wrapped in foil with...

    Grad Party cook review...

Stogie, WTG on the party! Did I read it right...did you make 32 racks of ribs on 2 WSMs??? Geeze...and I thought I was brilliant rolling up nine on my WSM. Do you find that the majority of the crowd likes em hot? I've had just the opposite experience and always make mine mild to appeal to...

    Maverick ET-73 update

He thinks it's a possiblity. I have hung the transmitter off the top handle of the kettle, and I have hooked it onto the fuel door knob. I can't find any other way to do it with the current length of the wires without making some sort of modification to the WSM.

    Maverick ET-73 update

quote:
Knob and handle generating heat? I've never been burned by either-- I thought being heat resistant was the point.

I didn't think it was a problem either, and told Darren that I checked the back-side of the...

This has been a GREAT day!

Kyle, It doesn't get any better than that... I have a son, Joe in the Navy overseas, and never hear from him as much as I want... He's due home sometime in October (we hope), he's never had anything on my WSM and I can't wait to cook for him when he gets home. As a former Marine myself, give...

    Maverick ET-73 update

Okay, I spoke with Darren, and I am sending the unit back for replacement. He thought all WSM's had handles on the side for placement and that the front door knob and top handle might be generating too much heat, he will have to do some checks with the unit. I also discussed with him the pain...

    Maverick ET-73 update

Well, I've used my Maverick on 4 cooks now. On cook 2 I lost tranmission with the remote about the halfway point, I thought I might be more than 100 feet away (big house)so I reset it and forgot about it. On cook 3 I lost transmission twice and had to reset twice, never being more than 30 feet...

Newbie to Smokin' but not Grillin' with Questions

Doug, Welcome to the site! You'll find all the help you need here from some very experienced members, many of whom compete. As far as cookbooks go, I followed Chris's advice and got Smoke and Spice by the Jamisons and have been really pleased with it. You absolutely have to try the BRITU...

Rib lovers, - what is your favorite rub ?

I also vote for the BRITU, brought some experimental leftovers to work (I was trying to decide on BB vs spares for a party tomorrow..) They were gone in a flash...and the party has now doubled...

    Boneless spareribs

Help! I bought a rack of spareribs at Costco, when I got home I realized they are boneless. Can I roll them like a bone-in rack? How about the cooking time...less...more?? Hoping to get them up in a couple of hours...

    Cooking Knives

Hi Bill, I will put my two cents in about knives. The very best knives for maintaining and getting a sharp edge are carbon knives, alas, they are easy to rust and high maintainence. High carbon stainless steel, takes care of the rusting and the edge is not as good but acceptable. All the...

quote:
Does the receipe for BRITU call for the Minion method?

Actually, it calls for something I call the "reverse Minion", hot coals on the bottom followed by unlit coals on top. Chris explains this step by step...

    Dean,
quote:
Nine kinds and some for supper! So, how were they?

I sauteed them up with butter and onions, very mild flavor, taking on more of the onion flavor than anything else, cream white meat, very tender...

Vent tutorial on the WSM needed :-)

Mark, Ribs are a great choice for your first cook, I did ribs on the top rack, chicken on the bottom. I also used the Minion method, one chimney of unlit coals under one chimney of lit coals, lasted the entire 6 hour cook with coals to spare. Use the BRITU recipe for your ribs, I promise you...

    Maverick ET-73: transmission interruptions???

Keri, I did a 6 hour cook and didn't have what you described and I would have noticed...I'm ashamed to say I was fixated on the damn thing for pretty much the whole time I would call Maverick, maybe they can answer your question, or replace the unit. How did your B&B turn out?

    Taking care of the grates

I forgot to spray my grates with Pam and had a lot of debris to clean off... Decided to try the new Dawn Power Dissolver to see if it melts off the debris as advertised. Result: Dont waste your money, I would have had a quicker time using the brillo pad and getting it over with. Used 2...

    Drying Mushrooms

Dean, Went on the foray this morning and had a blast! Supposedly this is a lousy time for shrooms, but we found about 9 different species (don't ask me to name them). I found some oysters and something that they call fried chicken mushrooms that I will be making for dinner. I became a member...
