    Pulled Pork sauces...

I just tried Steve's No. 5 sauce and recommend it. Carolina Red is good for pulled pork also. I'd put them on the side. http://tvwbb.infopop.cc/eve/forums/a/tpc/f/1980069052/m/2870053653 From the Mr Brown recipe. Carolina Red 1-1/2 cups apple cider vinegar 1/2 cup ketchup 1/2 teaspoon...

How to fuel (and time) a marathon session?

Add fuel as the cooks go on before the coals get too low or light additional coals outside the smoker and add them with additional unlit fuel as needed or dump the coals between cooks into a safe container like a metal trash can or bucket that you can seal if you want to start fresh for each cook.

    Cooking Space Help

You can cook and pull the butts in advance and reheat them if you can't get everything on in one shot.

very impressed -> wicked long burn time

Shut the vents down when you are done, it'll choke out the coals once they cool off just put them aside in a sealed metal container of some kind for next time.

    WSM Grates

The only stainless grates you can get are for the kettle, nothing for the WSM yet from what I've seen.

    Butts

I have no idea on a cut that small, figure it's 1 1/2 hours per lb normally, wouldn't expect those small ones to take more then 2-3 hours and the larger one around 6-8 hours at 225. In the mean time find yourself a BJ's, Costco, Sams Club or a good butcher where you can get nice sized butts.

    Sparerib Preparation

Do you remove the membrane on your babybacks? It makes them tougher to eat and can impact the smoke penetration in to the back of the ribs when you leave it on. As for the skirt, it's more of an appearance thing I think

    "Pimp" my WSM...

Jim's mod requires to you locate an 18 1/2 One Touch Platinum kettle to use as a base for the WSM, you'll want to add better vents or a BBQ Guru like he has to control air better then the one touch set up also. Another member did the same mod, here's the post -...

    Backwoods party

Backwoods makes pretty nice cookers, friend of mine has the comp model with the water set up and it will sit at 225-230 all day without being touched. They are charcoal fired vertical water smokers like the WSM. Of course you could buy another WSM, a guru and a jacket and still have a few...

    Lump Coal?

I got around to trying some of this charcoal in my kettle, it's good stuff but it does put off a lot of floating ash as noted. I was able to keep it settled by tilting the lid aside for the most part but it was breezy out and that still kicked some of it up. I did notice on the nakedwhiz's...

    A different "knives" question...

That price is about right, I was just looking at them and found the low end kit for around $122. The next kit up also comes with a 1200 grit ceramic hone for around $140. Not sure how good of a vendor this is, I found them here - accuratesharp.com
