    My first mod

Good idea, you can just stick the wire under the lid for now though. Flickr works fine, posting the link is fine, they ask you don't post large inline photos directly into threads here. Might want to consider a Maverick ET-73 remote also, it's got two probes, one for the smoker temp and the...

    Teltru

Don't see why not, it's just a nut and washer to lock the thermometer in.

Using the gasser (side burner) to light the chimney

Those gassers are good for something.. Turkey fryers are great for lighting the chimney up also. Enjoy the good eats and the weather.

Q and trailer propane heating problem

Less air pressure and oxygen is going to result in lower BTU output. Just poking around for info on google, I found a section for fire logs that claim you lose 4% of of your BTU output for each 1000 feet over 2000 feet, if that's somewhat accurate, your losing 24% of your BTU's at your current...

If you had a gasser and a wsm......

I'd cook as much as I could on the WSM (it can be set up as a grill as mentioned) and only use the gasser when I didn't have the time to fire up the WSM.

    Smithfield Baby Back Ribs

They might have went up again, haven't been in there for awhile, I just noticed they went up from the normal $2.99 price when summer hit.

    Smithfield Baby Back Ribs

    Looks like $2.99 a pound, last time I was in BJ's, an un-enhanced 3 pack was $3.29 a lb I believe.

    First Brisket This Weekend

Check with your local butcher if you have for a full packer. Where are you located by the way?

    Wsm or kettle?

No problem, just pointing out other things you can use the kettle for, can't see spending money on one just to cook one thing on it, it's a very versatile cooking tool.

    Wireless Therm

The Maverick ET-73 is an inexpensive popular model. I haven't seen a "best" yest, they all seem to have their strengths and weaknesses.

    Wsm or kettle?

You can do the same things with a kettle also...

Feeding approx 50 with my WSM and a Weber Kettle

Parts to convert EP-320 to NG

    Thanks for the update Joe.

    Smoking using wood chips

Make a pouch out of doubled up heavy duty aluminum foil and poke a small hole with a toothpick in it and place it in with your coals.

Parts to convert EP-320 to NG

I guess this is more directed towards Joe, trying to find out if the parts needed to convert an EP-320 to NG are available and what the part numbers would be. I'm assuming it would be the manifold and hose and whatever is needed for the sideburner. Got a family member who got a good deal on one...

    Weber Q and natural gas

You have that backwards, Propane burns hotter then NG. NG requires bigger jet openings and less restrictive valves to work correctly.

    Rancher Charcoal on four butts

I did read that Rancher's lump was pretty high on the list at NakedWhiz's site for ash production, I'm assuming the briquettes are made from the same charcoal but who knows. It will be less ash then you get from the K since there aren't a lot of extras in the briquettes.

    Hormel Natural Pork Butts (Enhanced?)

Any enhanced meat has to list the additional ingredients in the packaging.
