    I have the ET-901 that I got super cheap off woot.com. It works great, except to turn the unit off you have to remove the batteries. I fried the thermocouple probe during a 400* tritip cook and am looking for a new one. Does anyone know where to find one?

    I just close the vents down when I get within 10 or 20 degrees of target. It is very easy to control and works great.

    I did a chicken and a 20hr pork butt with the dry clay pot. I didnt notice any difference in the meat. Temps were rock solid.

    So temp control aside, is it a consensus that having less humidity with the clay pot instead of water doesnt dry out, or change the quality of ribs, butt, chicken, brisket, etc.?
