    About an hour. Do I need to wait longer to see a change? This was the first time I ever added meat to the bottom rack as in the past if I used the bottom rack the meat went on at th beginning.

    Fire went out....

    I would have restarted that fire and exposed them to more smoky goodness until they reached 195 internal. I have no doubts that reaching 190 will kill all the bad stuff and I would rather finish it on the smoker instead of putting them in the oven.

    Anybody have experience with sams choice brand charcoal?

    I have used the large size Sam's charcoal in the WSM. I did not really notice any difference other than that it produced more ash after it was consumed. I do not use it often though as I usually buy the big value packs of Kingsford when they go on sale at Home Depot.
