Help! 100 lbs of pork loin?

I just cooked 100 pounds of pork loin about a month ago. They turned out great, and I've been asked to cook again next year. Don't over cook them! They'll be dry as shoe leather if you do. USDA says they're done @ 138, so cook to about 130 and after the "rest" they'll be over 140 and...

    Barbecuing contest, need info

Oh...Try to visit Friday afternoon/evening. Things are pretty relaxed, and more willing to talk and share information than if you visit on Saturday. Saturday mornings, the teams are getting their turn-in boxes ready and don't need distractions. After turn-in, they are pretty much busy cleaning...

    Barbecuing contest, need info

Almost any of them Winter Haven is great. I've never been to Sebring or Okeechobee, but they are good, if the weather co-operates. You could always try the one in Panama City, Panama . It's a first year contest, and I still haven't figured out how the logistics will work. BOB

    Purchasing Brisket

Thanks Kevin and Craig. Tampa is a little far to travel for brisket. But I'll find the place in Sanford. I've been to Feltons. I thought that it was further than Plant City, but I was visiting in Tampa when we made the trip. BOB heading out the door to judge @ a FBA contest in Grant

Dutch Oven in a WSM - Okay?

Well, I frequently use my antique cast iron Dutch ovens in my smokers, and it helps with the seasoning. I have no idea about one of them fancy "Calphalon" Dutch oven's, though. My best guess would be that if there is no plastic, you wouldn't ruin it, but it might not look so pretty. BOB

    StokerLog Version 4.0 Preview

I'm back. Just used the Stoker and Stoker Log with one fan, one pit temp probe and 4 to 6 meat probes all weekend at a contest. Absolutely no problems with the program or the Stoker. I'm guessing that maybe my problem before was trying to run too many fans (3) pit probes (4) and meat probes...

    StokerLog Version 4.0 Preview

Well, that response caused mixed reactions here. It shouldn't be a Vista problem (which is good!), but it seems it's my problem, which is bad for me! It may be later in the week before I can do more. Yes, ethernet connection, No, I don't remember anything in the status line. I DO...

    StokerLog Version 4.0 Preview

Here's a question from a Newbie to this discussion. I've just recently found this fantastic program, thanks Amir! OK, I'm (unfortunately) running Vista. The Stoker Log program will sometimes stop running. No error messages, except the large "Start Logging" button will be highlighted, instead...
