    New Holland (PA) Summerfest, 8/26-8/27

Carl, I did make it out there. I left my wife behind to deal with Irene on her own. I think she is still p/o. Lol. Sorry that I don't remember seeing you, though I made it a point to look for a "Carl" name tag. It was a bit hectic in the judging room! I hope to catch you somewhere along...

Best BBQ Book(s) - What is your "Bible"?

I bought my brother GRILLING FOR DUMBIES (not kidding), and, boy, did he need it. Having said that, I have at least 15 different "BBQ" books, including most mentioned here. The one I consider my "bible" would be SMOKE AND SPICE. Regards,

    Orchard Wood - Pesticides?

For several years now, I have been getting my smoking wood from a local orchard. I'm pretty sure that the apple and peach wood are from that orchard, but he also sells hickory, oak and cherry that I imagine he picks up elsewhere. The question is this ... should I be concerned about pesticide...

    Wireless Thermometer Bedlam

Do the wireless thermometers like the Maverick ET-73 or ET-735 have a dial in frequency adjustmnet? I can just imagine showing up at a comp where everyone has one .... who knows what temp you are actually reading. It could be the HH brisket guy next to you!

    Finding Backyard BBQ Contests

Hello all! Anyone have an idea how I can find backyard BBQ contests? I've looked on KCBS website as well as the Mid-Atlantic BBQ Assc. website, but to no avail. I would like to compete in a couple backyard contests this year and early next year. My brother and I are targeting a contest next...

    Rate My Box

J- 9-8-9-8 CBJ I am a fairly new judge. This is my second year and I have five contests under my belt. To me, appearance is the toughest to judge and is easily where I am most liberal. It is a MEAT contest, not a pretty contest afterall. I do very much remember in my judging certification...

Kieth, I have a new model WSM just received in June. The included cover is VERY tight, to the point of being a bother.

Anyone else have a grilling "tool box"?

haha Hayden! Look at your poor screwdrivers being crowded out in the lower left hand corner. I love this post!!! Tried using toolbox in past, my tongs and untensils are just too long. Bins get too messy. Still looking for a solution.

    Brinkman Smoke & Grill

TM, I also have the Char-griller with the side fire box. Very similar. I've had the CG longer than the WSM, so I have more experience with it. The main advantage to the WSM is that it is a whole lot less fuss. I would never dream of doing an overnight cook on the CG w/o getting up every two...

    Smoked Chicken Salad

Hey Chuck! I've put some thought into this as well, but haven't done it yet. My thought is to smoke chicken thighs with your favorite wood, but only season salt/pepper. No marinate, no brine, no sauce. Then, just use your favorite chicken salad recipe.

    The Overnighter, Who's Up?

Hey RD, Great post! Love the pics. I know what you mean with the Mr. Brown. I did that on my first and every butt since. I haven't been brave enough to try something else, but I think that is coming soon. I did a BoB for a Fourth of July party. I got my brisket at BJs nearby. I had...

Best Dang Steak Technique i have found

Okay, leave this to me to notice .... The cookbook linked in the original post can cost almost $200.00 new!!! ($5.13 used in bad shape). Really, has anyone ever spent this much on a cookbook?

    seared Ahi

Dan, I saw the Alton Brown episode several times myself, and had always wanted to try it. Thanks for the warning about the heat of the sauce. If I remember correctly, the tuna was quite rare at the center. Do you have a trusted source for Tuna? I do not live in a metropolitan area and I am...

    Coffee Rub on Brisket

Hey Folks! I've seen allusions to coffee rubs on briskets on this board, so I searched forums here and also googled. I find the idea to be very interesting. I do not drink coffee, but I have found that I like it as a flavor/ingredient in other foods. My question is this. Would anybody ever...
