Target Weber Clearance has started (YMMV)

Picked up a JJ for my SIL last Wednesday. He has a Performer and a mini-WSM (SJ). They have a camper and PU truck. The Performer is too large for camping and the mini-WSM is too small. I think the JJ will be "just right!" QUESTIONS: What are DCPI codes? What do the initials stand for...

    Jumbo Joe at Target

I read a thread sometime within the last couple of weeks - probably more recently - where someone reported that Target is doing their seasonal sale putting Jumbo Joes on sale for ~$30. IIRC the post included a SKU or UPC that could be used to search and a URL for finding stores near you that...

    Vortex User Question

I bought the Vortex a few months back and have used it a few times on my OTG. I like to do a progressive burn around the perimeter of the kettle when I'm doing butts or other low and slow smokes. I've not used the vortex to load the fire grate because I haven't figured a way to have a starting...

    Basic Barbecue Chicken

I'm with those who say to grill BBQ chicken, not smoke it. I get a very hot fire on my kettle using the offset heat method. I fork all my raw chicken thoroughly. I put it on the hot grill and wait for a high sizzle. I then swab it with my home-grown chicken BBQ sauce and let it go for a few...

Need to Smoke a Brisket on the OTG

Thanks, Mike! My biggest concerns at this point are controlling the temp of the fire for the duration of the smoke and getting the burnt ends right. I sure would like to see some pics showing the anatomy of a brisket and where the point and flat come together. :blackkettle:

Need to Smoke a Brisket on the OTG

Smoking Brisket onthe OTG Yes, I will be using my OTG 22.5" kettle. I was pretty certain that cutting it in half would be a bad idea. I think I will separated the point from the flat, but I think I will make burnt ends in a foil tray out of the point. I have only done a couple of briskets...

Need to Smoke a Brisket on the OTG

Just came back from our HEB (Texas supermarket chain) with an 18-1/2 lb. cryo packed vacuum sealed full packer for $2.47 a lb. - $45 and change. I went looking for more boston butts and found this. I've only ever done brisket in my MES, but I've gotten pretty comfortable with the snake weave...

Tips for cooking a pork shoulder, minion method on a webber kettle

Has anyone used a Vortex ring instead of a snake? What were the results? Any better any worse? Any easier more difficult to set? . . . clean up?

Target Weber Clearance has started (YMMV)

$29.98 quoted for my local. Problem is I picked one up on CL a few weeks ago at that price that had been used twice.

Questions about my own wood for smoking

Wood that has not been dried before using will leave a bit more residue in the smoker. It might show a bit more resin, too.

    Pork butt rub duration

I rubbed 'em and then been delayed as much as 3 days before smoking them. The rub might get a bit moist and pull some moisture out of the meat but you can just top it up with the leftover rub or make a small batch if you want to. Doesn't really matter much, IMO.

    Charcoal Weave or Ring

Thanks, Wayne! Just what I was looking for.

    Charcoal Weave or Ring

I'm set to do a couple of pork shoulders (butts) on my OTG tomorrow. The meat is rubbed and waiting in the fridge. Thought I'd lay my charcoal this PM and get started a o-dark-thirty tomorrow. I want to cook them low and slow and thought I'd use the charcoal ring method. It's been awhile...

What Are Folks Paying for Used Jumbo Joes?

Picked one up on CL for $25. If it had been used more than twice you couldn't tell it. I think I did all right.

What Are Folks Paying for Used Jumbo Joes?

I see that they retail for $60 + tax. I figured half that would be a bargain. Yes? No? What are you seeing them go for?

    Performer Brackets for OTG

Thanks, Greg! That link helps, too.

    Performer Brackets for OTG

I'm thinking about building a table with casters and hanging my OTG kettle off one end, sort of like a Performer. I plan to cover the top with tile. The idea is to gain a little more table top space than my Weber grill table provides. I've got the design done, but when it comes to fixing the...
