    peach wood?

Oh yeah, definitely used some peach and nectarine wood from my own trees. It's a lighter smoke (kinda like apple or alder).

    Computer interface to the WSM

Matt, I think that you definitely have an interested audience. Personally, I don't think I'd be interested in a servo to control the air vents, I would be more interested in remote monitoring of temps and the data logging.

Poll: Do you light off your charcoal refills before adding to your WSM?

I'm kinda like Chris. I, too, wait until the temp has dropped lower than it should be, and then add in some freshly lit coals if I don't think the existing embers are going to make it thru to the end of a cook. While I'm lighting the new charcoal, I leave the access panel off to help add oxygen...

    ribs tomorrow

Daryl, If you've never foiled, try it. I do both because I'm still experimenting. I find that the foiled ones are definitely more moist. I'd suggest foiling baby backs for no more than an hour. Otherwise, they tend to get way to tender and the meat will tear just taking them out of the foil...

    Beer can chicken rack?

I knew I had seen something on eBay like you had described. Check this out: Multi Beer Can Chicken Rack And they are available in 2, 3, 4, and 6 capacity, too. Maybe if you used a rack like that, you could tie butcher's string around the chickens so that they wouldn't tip if they got bumped a...

    High-heat Chicken Cook

Kevin, That looks and sounds absolutely delicious! Could you post your recipe for the mango-chipotle-garlic sauce, please.

    First cook tonight..any tips??

My only suggestion after reading your post is to go easy on the smoke wood you are using since you are only doing chicken. Chicken doesn't take too much smoke before it is over-powering. Also, I tend not to use heavy smoke woods like oak, hickory, and mesquite for chicken. I recommend using...

    1st Butt in Over a Year / ET-73 / Sand / Air Leaks

There's actually another probe you can buy? How much is that and do they make heavy duty probes for both the cooker and the meat probes?

    need advice...hopefully quickly!

Oh, beef ribs! I've never BBQ'd beef ribs yet. So, I don't have a feel for time on that. I expect you've done your research on the bulletin board because it seems to me they are quite different than say, baby backs. Enjoy and post how those beef ribs turn out.

    need advice...hopefully quickly!

Phil, Laying flat is fine. I'd lay them bone side down. Oh, what a nice day to BBQ, nice and warm today. You are going to eat late, though. Shooting for around 9pm or so? Hey, with all that extra heat, you should throw on a quick meatloaf. It'll be done way before those ribs.

Oh, no. That's definitely the good stuff!! Enjoy.

    1st butt smoke going great!

It is a good weekend to smoke in our area today, Phil! Maybe I'll smoke a meatloaf tomorrow. Glad to hear that your minor fix worked wonders on that steal of a WSM you got. Enjoy your pulled pork this evening.

    One more question

Phil R., Oh my, not the charcoal grate. Patience is a virtue, Phil. You got the WSM at such a steal, just order a new grate from Weber (or your local Weber retailer). You can afford it and the wait. ;-) Phil D.

    New way to soak chips.

That is too funny! Another gadget to put on my list for the man that has everything! (Is that even possible?)

    I just got a WSM for $12.50!

Loren, Hmmm, that's a good point you bring up and I don't know if it would fit. Maybe someone else can answer that. I measured my top rack and it is 17 1/2 inches in diameter. The bottom rack is 17 inches in diameter. It is possible the rack from the 18" kettle might fit. Does anyone else know...

    I just got a WSM for $12.50!

I have a friend whose family owns the property next to the Walgreens distribution center. The property is part of the flood zone, so, they have lots of ducks, too. But, I don't hunt duck, so, I've never been.

    Brown sugar Burn temp?

Do you really need brown suger? Can you substitute turbinado (suger in the raw) that has a higher melting point, instead?

Camping This Weekend -- 1 Smoke, 5 racks of ribs, 1 Brisket -- Will It Fit?

Karl, I hear ya (and I think most do). But, I got to agree with B Foster. Ya know, when folks are camping, those burgers and sodas are the best tasting things when your hungery. They probably didn't think twice about how much added trouble and expense you went thru to BBQ. But, I'm sure they...

    I just got a WSM for $12.50!

Your welcome and I forgot to congratulate you on your great find! Actually, I had to do a search on this BB as I learned of the deal here and it was merely passed on. I suspect you'll get your pan by midweek as mine arrive really quickly. Anyway, the butt is an excellent choice because it is...
