    Le Creuset

I have a number of pieces as well - great stuff - it does last forever and you can often find this on sale as houseware/cookware businesses are prone to failure - my mother has Le Creuset that is over 45 years old that is still going strong so the investment is returned. Between that and my...

    Apple-Brined Whole Turkey

I did this today and it was excellent. I used a bit of apple and cherry. Very moist. Followed system 100%. I never cook stuffing inside the turkey since that is an area prone to bacteria and it isn't worth it for me. Great recipe, rave reviews (best turkey ever, and one person was 81), had it...

    Tacos al pastor

If I could make one suggestion LarryR - I would puree the mixture, then pass it through a fine sieve or a cheese cloth - this would get the essence but not the pulp/fibre. Might do it for ya :)

    Silver Bullet Smoker Jacket.

I love my smoker jacket - use it "every" time - it definitely saves on charcoal, and ensures a very consistent output from the WSM. Well worth the $100.

    Bacon Curing

The liquid will build up over the entire week - and I think you are on day 2 (yesterday) and day 3 now? I would give it more time. It takes a few days for things to get going while it is in the back of your fridge. Nothing sounds out of the ordinary. What temp range is your fridge set to?

Vintage Berkel Hand Crank Meat Slicer

I see some on Ebay for around $900 or so... There is another one from 1925 for $2000 + $600 shipping.

    Recommend A Good Toaster

An early 50's Oster Meat Grinder. It is decent, not as powerful as I thought, but a beautiful machine. It works well. General Electric Pear Percolator from the 50s - makes good coffee, I like espresso as well but this makes good coffee. Sunbeam Model T20 Toaster - perfect every time, easy on...

    Recommend A Good Toaster

Very cool. You are most welcome. I love my vintage toaster, meat grinder (with ice crusher attachment), and coffee percolator... A lot of old stuff is well designed, and has lasted forever. What year is your B14?

1st disappointment with Weber customer service

Yep, buff the rust off. Prime it with high temp, then paint it with high temp would be my guess. It'l buff out

1st disappointment with Weber customer service

Why replace it? You can fix the chip and move on. I don't see why the whole thing is bad now? Sorry if I am just slow - its kind of a Monday today.

Michael Ruhlman's Maple Cured Bacon from "Charcuterie"

I have to go to this amazing european butcher ( I think they are danish) for pork bellies, pork fat, rendered lard etc for when I make salami, bacon, and other charcuterie delights. Safeway, Wal-Mart, Costco, etc here never carry anything cool like briskets or pork bellies. Sodium Nitrate is a...

Michael Ruhlman's Maple Cured Bacon from "Charcuterie"

Yes - bacon is so amazing when its made using old school methods. I am going to buy a few pork bellies tomorrow and make up a couple of new batches (starts humming the I love bacon song)

Michael Ruhlman's Maple Cured Bacon from "Charcuterie"

I have made virtually every recipe in the Charcuterie book over countless hours - its an amazing book and I love it as it allows me to eat great food at a fraction of the deli prices - and it tastes better, like virtually anything you make yourself. I enjoy making terrine's, pate's, bacon...

I clean it as soon as its cooled. I love how smoky everything smells and find it pretty easy to clean up the 2 racks, water bowl, and wipe the lid a bit.
