18" WSM Lid Holder in 1 hr for $20

Hi Jim, It seems plenty stable. I've cooked twice this week and also left the lid off on one of the windy afternoons and didn't see any problems. Not a scientific analysis, for sure. I wish I had a method to measure the pressure required to tip the unit with and without the lid. I tried...

Best way to purchase Wicked Good...

Any suggestions on the cheapest way to purchase WG charcoal? I live in Dallas and according to the WB web site the only Tx distributor is near Houston. The shipping charges are nearly equal to the product cost and that puts it out of my price range. Tnx, Russ

Urgent - Brisket help needed, smoking tomorrow!!!

Thanks for the great feedback. I smoked my first give-away brisket today. I followed the minion method and used 3.5 small pieces of hickory, and only applied seasoned salt and black pepper to the brisket. The taste is much better. It still is not where I want it to be. I'm gonna try...

    No smoke ring

Hi Chris, Here is the ring I got, using blue Kingsford and no wood, minion method. I let the brisket set at room temp for one hour and rubbed mustard, Lowry's seasoned salt and topped with brown sugar. The smoker set at 200 for about 30 minutes and then took another 30 to get to 225, where it...

Urgent - Brisket help needed, smoking tomorrow!!!

I'm smoking a brisket tomorrow for a friend as a Christmas thank you. I was thinking that I would use hickory chunks to try to give it a better flavor. The brisket for tomorrow is 9 pounder. Here's the pics of today's smoke....marginal at best. It was a cryovac 8 pounder that I trimmed before...

18" WSM Lid Holder in 1 hr for $20

I built this lid holder today. It took about an hour and just a few things from Home Depot. Its not too obtrusive and seems pretty sturdy with an empty cooker. Aligning the holder with one of the legs makes it very sturdy. Let me know if you want a step by step and parts list.

    Weird wet covering on Brisket

Thanks for all the answers. I thought I was using the Minion method, but I had it backwards. I will take the advice given and avoid Mesquite, not put BBQ sauce on until slicing and be more careful with the lid. I will try again with Minion and with HH as well and remember to watch the temp...

    Weird wet covering on Brisket

Yessir, top vents wide open and bottom all the way at first and half way open about mid-point in the cook.

    Weird wet covering on Brisket

My first post, sorry if I screw this up or if its too long... I have the smaller bullet for 1 yr, smoked several times, mixed results. Here is a problem that I had on Sunday and seen last smoke about 2 wks ago. Smoker Prep: One charcoal starter full of plain kingsford with 3 pieces of dry...
