    HH Turkey with an ATC??

    I think I used an ATC once on my bird and I was so worried that the temps would get away from me (they didn't) and fry my probes I never used it again. I'll go back and see if I have a cook log from that Thanksgiving and post my findings.

    I think it was your temps, don't know if 300 is enough to get crisp skin. I use olive oil on all my birds with no skin problems.

    What size? I've brined my larger birds up to 48 hours. I think there's a point where the bird cannot take anymore brine and there's no benefit to the additional time. What that is I have no clue, calling Kevin K?

    Hi Jerry, I'd do a practice bird just for the hell of it. Personally I haven't experienced any benefit to low and slow over "high" heat - I think it's a bit different than a chicken; I brine mine, stuff it with veggies, ice the breast down so the white and dark meat finish at the same time etc...

    brisket high heat cook

    Richard, I've never had luck using a probe during the foil phase, I get crazy readings that are inaccurate. I go by time and feel. I let her go two hours foiled and then start checking for tenderness. Other may have advice on using temp probe during foil phase.
