It worked! Except... (very small brisket)

So my cook yesterday went great. Used a pile of lump and got it started with 8 or 9 briquettes mm. Held steady at 250 for four hours then wrapped it because the internal temp was just sitting there at 140. After a couple hours our guests were getting anxious so I pulled it and put it in a...

First pulled pork on the kettle

I did a three coals deep arrangement like that a while back and was really impressed with how easy temp management was. I went maybe 60% of the way around the outside and it held solid at 250* for more than 6 hours. Great photos!

I have done some searching but nothing addresses a brisket that small. It is like a half a flat. I had originally grabbed it on impulse as an...

    Dedicated Pizza Cooker / Weber

Looks like a fun project. I am curious as to the result. I'm interested in making pizza on my grill and have been reading up on it. Would the hole cut in the lid line up with a pizza stone on fire bricks?

    Neutered my Performer

Interesting. I just got my first performer and love the gas assist. It does look like yours had a 20# tank though and that would take up a LOT of space compared to the little tank on the new ones. Looks like a good place for some vertical slats to hold a variety of grate accessories!

    Wow!

Hello, my name is Aaron and I just got my first Weber this past Friday. My wife and I had decided to re-do our patio and as a part of that effort I was able to wrangle a new grill. My first search led me to think I needed a big green egg. You see I do most of the cooking at our house and I do...
