    Tim, That's what I ran into with the SJS. It really is the wrong grill for this mod, the gold is so much better, and you don't run into the ash issues. Now the good news, play with it, and show us how to make the 8 hour fire with the sjs. Enjoy the journey...

    Well if you really want to shorten the time... When its time to foil take the butt off and put the foiled butt in the oven at 325. Makes me sick to do it, but I will when I have to... (I have a wife and 3 kids so I don't always have the luxury of time, I have to just "git 'r done"). Jay

    If you are unsure and want to speed the time up and you are only cooking one but, I would cook it this way. (this isn't about getting traditional, or perfect butt, its about having something that's tasty and edible at the end) 1. After you have seasoned it (either immediatly or overnight)...

    For my extra grates I used the charcoal grate from a weber 18" grill. I actually like these better than the standard grates because they are heavier duty and appear to season more easily... The are also just a bit smaller than the standard grate so they go into the steamer body much easier...

    I agree with this 100% I still had enough charcoal to go for another hour, and I could have put more charcoal in, AND it was about 20-30 degrees most of the cook. I am really wondering how much meat you can cook in the 18 and 22 WSMs... probably enough to feed an entire army.

    George, It was a chuck roast i let go fo six hours. I didn't use the flower pot just themeat sitting in an aluminum pan. The bottom was burned but i put the meat int a pan with water and it was edible. We made tacos out of the meat. Jay

    Tim, Go with the gold. For just $4 more, it will save you a lot of hassle. If you already had a silver I would say just use it, and don't spend the money. But the $4 premium is worth it for the easy of ash handling... (I have used both, and its no contest).

    Matt, I did quite a few things with my cooker. I have cut the bottom all the way out now. I use the clay pot to difuse the heat. I drilled holes in the side of the lip where the steamer lid is. I used long screws to hold the dish up. I rest the 1st grill grate on that. Regarding the fuel...

    Couple of thoughts... If you cut holes in the bottom you don't need a diffuser... the bottom diffuses the heat. The extra pie plate would serve to catch drippings. I did something similar at first, but I like having the hole and the clay pot (or pie plate) to difuse the heat. I think you are...
