    Rib racks

Ditto...I ended up going with the CharBroil racks as well.....cheap cheap cheap.......and if they get to dirty....you can simply pitch them and buy a few more.

    Beef Shank???

Man..I would put some salt, pepper and garlic powder on it. Smoke it with some Oak wood to the point that it's still juicy and very tender but not falling off the bone but not where the meat itself is falling apart. Then the entire shank...bone-in over a bed of garlic mashed potatoes. Now I'm...

    Beef Shank???

Is the foreshank boneIn or has it been boned?

    Beef Shank???

Me...I would simply just rub it with some salt, pepper, and maybe some garlic and or onion powder. I don't think something like that really has to have a ton of seasoning....there are times when beef can stand on flavor alone and I don't feel you always have to flavor it up. Let the smoke...

    Home indoor Deep Fryer

Help! - Chicken still not done.

I'd have to chime back in again and say I have never really had a bad chicken on the WSM. I just butterfly them and remove the breast plate and some of the other bone. I even found that cutting it completely in two between the two breast is better in some cases. I makes it easier to turn...

HEB in Texas has Briskets on sale

Steve...I'd have to agree with Russ. Man.........where I'm at here in Florida...it's a pain to get ahold of a good size butcher's cut whole brisket. Mostly I see the trimmed flats and they are tiny and not cheap...or the ones that have been treated and prepackaged by hormel for cooking in the...

How to cut a frozen pork loin?

Chainsaw? Just kidding. Now that would be a sight.....I'd have to agree...take it to a butcher or a band saw would work. Hmm...this could be that excuse you've been looking for to get the spouse to let you buy a band saw. Too birds with one stone.

    Paprika

I like the Hungarian paprika the best....good spices do matter. I tend to lean towards the spicier side on this one. Sweet is good but I love the heat.

    Sam's Club, BJs, or Costco?

I'm not really happy with either of them. I ended up finding two local butchers/meat markets where I go to get what I want. Works out better for me because for a few dollars more they prepare the meat however I want. IE....trim-up and remove the membrane from the ribs, trim-up my butts and...

    BB Ribs

Got a second ????? regarding this topic. Would it be plausible to do say a 10lb butt or a 10lb brisket on the bottom grate and then when it's say about 4 hours from being done...throw four racks of ribs up on the top grate and keep on truckin. Figure that way (taking in account for the brisket...

    BB Ribs

Greetings all... I have tried all the differant rubs and such on this site for cooking ribs and am looking for something new to try. I wanted to do a brisket but my wife of all things has asked me to smoke her some ribs for Mother's day and I'm looking for something new to try. Ahh....if all...

    first overnight butts

Butts on a woman are great to look at but pork butts rock......my favorite way to date is mustard and whatever rub floats your boat....I lean more towards the spicy side. The hotter the better. I really just end up using a homemade blend of dried crushed peppers, salt, white pepper, garlic...

    BIG BEEF Cook

So when it comes to beef. What are the largest cuts of beef have all of you smoked before. I did a 18lb side of beef (boned) back on new years eve of this year. Just brought it up cuz I just happened to finish eating the last bit of it that I had frozen tonight for dinner. Took my 20+ hours...

    Cherry Wood

Here's a good place to get wood and stuff in St Pete or it was the last time I was there...that was at least a year ago. It's where I bought my WSM. Seemed to be the only place I could find it in the greater tampa area. GOOOO TB Lightning...did you say.....Sweep the Canadians...why yes we did...

    Cherry Wood

I live out in Valrico past Brandon off of Hwy 60 and there are lots of Orange and Grapefruit groves out in this area. I buy most of my produce out here from places like this and when I'm buying oranges or other produce I just ask them if they have any trees they have chopped down and if they do...

    Remote Thermometer Purchase

I've been using Polders for about a year now and have gone through many of them. They are good as a back up but very unreliable. I also have a remote sensor model made by the kitchen furnishing company Williams and Sonoma (XMas gift...can't turn down free stuff) and it works pretty good. Test...

    Buckboard Bacon question

I just tried this recipe this past Sunday and it worked out well...timed it to be done around breakfast and it worked out well. Cut it in slices and served it up with some homefries, eggs, and toast..........mmmmmmmmmm. It rocked! Go---Tampa Bay Lightning (Can you say HOCKEY!...I knew you...
