    Sweet Potato on a WSM?

This has got me thinking, I'm on a no-carb diet where you are supposed to do a small "carb load" about once every four days, last meal of the day. I haven't even bothered to do it this way, and have just settled on not eating carbs in general. But the thought of some sweet potatoes roasted with...

    Sweet Potato on a WSM?

Nice!! My eyes read: honey, raisins and butter, but for some reason my mind saw : rum, raisins, and butter. I bet that would taste good too.

    Best place to buy Thermapen?

When I bought mine a year or so ago, I just Googled it, and went with whoever had the best shipping costs. Overall, the price was usually the same, just different shipping costs. I know King Arthur's Flour sells them in their catalogue, and they always seem to have them in stock. Whereas a lot...

    country style ribs and kraut

This reminds me I need to clean my grills. Yours is much cleaner than mine. Nice cook.

Where to buy a roasting pan ?

I've done a few cooks using just a disposable. You can bend those suckers to whatever shape you want.

Why should you clean your grills regularly??

I'm pretty certain that animal control would have been able to find a beekeeper willing to pick them up for free. People are stealing bee hives, they are so in demand, and supply is so low.

    Early Morning Briskets

Nice looking cook, and great slicing. I've gotten a lot better with having that same knife now.

Why should you clean your grills regularly??

Wow! That was shocking to see and read. One thing I'll say in his defense is he is lucky he didn't just go rip off the cover, or God forbid a small child retrieve a toy or ball that rolled under there. That was one heck of a hive, and in hindsight it would have been nice if it was handled...

    Brisket Flavor

I will add, that the one brisket I did wet age did have a more pronounced livery flavor. But its overall flavor profile was in my opinion more enhanced by the addition of FAB, not sitting in a cryovac. To drag out the debate of wether or not wet aging creates tenderness isn't what I'm looking...

    Bread Machine

Let me ask you guys this, if it were not for the delay timers, would you really find something like this useful enough to take up more counter/shelf space? My 500W KA mixer will do all the kneading work for me, then I can bake it in my oven, in whatever shape I choose, on my stone, or in a loaf...

    The BBQ Song

This song pops up here often. The funny thing, I think, is they first come off looking like a slapstick thrown together group, then they hit the song and keep the beat and rhythm throughout without making a mistake. I wonder how many takes it took to get that.

    Brisket Flavor

Looking back, I had to jump back and delete the reply I just posted here, cause I mixed up for a minute whether I aged either of these two primes. No, I did not age either, and they were prepared right after thawing. I did age one just before these cooks, but it was a NRP and it had flavor five...

Where to buy a roasting pan ?

I picked up mine yesterday. Wow, it's lightweight! I was worried that it might be too thin. But I don't think it will be a problem. My joys in getting it were tempered by my frustrations with also getting my new espresso grinder the same day, and finding out it does not work right.

    Help - Massive Brisket

I would foil the empty water pan, but yes, it can act as somewhat of a heat sink. Many people, (I included) use a modified piedmont pan in order to help in that regard.

    Brisket Flavor

Thats the same story as mine that I just cooked. It was a Niman Ranch Prime! Certainly not some inferior cow there. But it wasn't just specific to this one cook, its the trend in general. Some have a great depth of beefy flavor, some have little.
