    Probed for tenderness by going in the side of the flat with the thermometer. Did not let it rest but 1 minute before foiling it. We've actually still got it foiled all this time since we are working on something else. More on that in a minute.

    12.5 hours and we were getting 205-207 in the thinnest part of the flat. Other parts were 198-202 so we went ahead and got it off the smoker. We wrapped tightly in double foil and put it in the oven to rest for 2 hours.

    Dale's opinion is that the fire is burning even and slow and that we should leave the vents at 10% open and go to bed. I sm going to go ahead and agree. Time for bed!

    Almost 3 hours in and temp is close to 250. We set the vents to 10% open awhile ago and still same temp. I think the oak is making it run hotter.

    We opened the vents to 33% since it seemed to be stalling but the temp climbed a liitle too much So we set it back to 25% open BTW, full moon tonight
