    Moving up to 22.5 WSM

I started w/ the 18" several years ago and when the 22" became available added that as well. I kept the 18" though for those times when I want the capacity but also because it's more portable. On more than 1 camping/fishing trip I've loaded the 18" and a 22" kettle in the truck and smoked up...

    The All Encompassing Beer Thread

I'm a huge beer lover as well as all things Dog Fish Head. Living in Maine I also have a good selection of New England craft & micro brews to choose from as well. Perhaps even better though, I live 2 miles from what Beer Advocate has rated one of Americas best beer bars in Ebenezer's Pub.

Ever had one of these moments while grilling?

I can honestly say no for one good reason; my "ashcan" is a small galvanized steel trash can. It's sold at most hardware stores for only a few $ and works perfectly for this type of job.

    Grilling & BEER

I love all things DFH w/ 90 & 60 Minute and Aprihop being at the top of my list. Being in Maine I have access to a ton of good micro and craft breweries as well. BTW, the only bar in my town, about 2 miles from me, is this place: Ebenezers Pub. Who would think that in a town of 900-1000 people...

    Weed Burner

Nobody just uses a piece or 2 of newspaper w/ the chimney any more? That's what I use and light the newspaper w/ a lighter or map gas plumbers torch.

Standing Rib Roast: low & slow, or hot & fast?

I do the higher heat because I don't get the same doneness. With my clan I have those who love the more medium end cuts and those who want medium rare-rare so going high heat is the anser.

    Suggestions for Smoker Accessories

Beer. Perhaps a flashlight for those overnight cooks. Beer. Good thermometer w/ remote. Beer. Good gloves. Beer. If you have to choose one of the above, I choose beer.

    Recent cooks

Kevin, I totally agree on not waiting for the cooker to come up to temp. I dump the lit charcoal and put the meat on right away as well. I've found that the slow, steady climb up to temp means just some small vent adjustments along the way rather than watching like a hawk and trying to...

    July 4th Q time?

My wife and I are both originally from Cape Cod (Sandwich) and her family is still there so we always spend the 4th on the Cape. Huge fireworks display on the beach down the street from my in-laws place. We are talking several hundred people on the beach with several families competing with...

    Fishing Trip

For over 20 years myself, father, uncle and cousin have gone up to Moosehead Lake in northern Maine every spring for a long weekend fishing trip. Its a guys only trip that sometimes yields good fishing, sometimes poor fishing, but always good times, good food and more than a few adult beverages...
