    Maple and Birch

I agree with Wade. Maple is great on ribs and butts.

    4th of July

Might I add only one suggestion: 2 barrels of beer would make it really nice!!

    Probe eyelets

I agree, Frank. I've got 4 Guru eyelets in mine and couldn't be happier. I figure, why mess with a good thing. No need to improvise when a great product already exists.

    WSM Stacker

Anyone talk with Fred's on Friday? Do we know if they have received the shipment? Can you tell I'm anxious to get my stacker?

    Out of round?

As long as you can spin it and "tighten" it as you say, there should be no problem. My center section has been out of round at the bottom since I got it. I just put it on the charcoal bowl and turn clockwise until it "seals". Seems to work fine for me.

    WSM Stacker

I talked with them yesterday afternoon and they are expecting the shipment to arrive "very, very soon". On arrival, it will have to clear customs but that shouldn't be a big delay. He said all the shipping labels, etc were ready and the stackers will be shipped out the morning after they get...

    Buying wood online

smokinlicious.com Great quality wood. All center cut with no bark for those of us who like it that way. Good customer service. Look around the website but call before you order. They sometimes have woods that they don't list on the website because they only have limited amounts.

    Transporting WSM?

Transporting my WSM for the first time this July 4th as well. Luckily, I drive a truck with a covered bed. Shouldn't be too hard for me. Good luck on your trip.

    WSM Stacker

I've got 4th of July plans that can't be made until I know if I'll have my stacker by then. Wish we could find something out for sure.

    Slooooow Butts

It all worked out well. Butts came off about 7:00 and we pulled them at about 7:30. Cooked them for 19 hours to get to 191-194 internal temps. There was plenty of beer and appetizers to keep everyone happy until then. It actually added to the "show" a little bit for them to be late. Some of...

    Slooooow Butts

Got 3 butts on the smoker now. They should be done, but aren't close yet. This only happens when I have a "deadline". Guests arriving in about hour and a half. They won't mind waiting a while, it just makes me mad. In their eyes, I'm the master smoker so I like everything to work out...

What's the latest on the Pro Stacker?

Don't think many, if any, of us have one yet. The big shipment we have all been waiting for isn't here yet...shouldn't be long now though. I checked on the status of my order a few days ago and the auto-response was something like: This order can not be modified. It has been processed and...

    Injection timing?

I was planning on Chris Lilly's injection which has no vinegar, so hopefully it won't really do much towards breaking down the meat. Any other opinions out there?

    Injection timing?

Was going to Q my first injected butts this weekend and I have a question. I have found several "how-to" recipes around, including the one on this site, and they all say inject, rub, cook without much rest time. I am used to rubbing my butts (that always sounds so funny) about 8-12 hours...

    DigiQ II

It's really just a convenience...but it's an awfully nice one. It's really all about peace of mind. I used my WSM for a full year without and had more than a few successful overnight cooks. But there is really nothing like going to bed and knowing that your pit temps will be exactly the same...

    How many racks of ribs?

I agree with Bryan. I always cook too many. If you are going to have 2 or 3 sides and appetizers, etc you don't need a whole rack per person. I'd say 5 racks max for your cook.

    Cleaning inside of kettle

Thanks for the info. What kind of "polish" is best for the outside?

    Cleaning inside of kettle

I just picked up a 22.5 inch One Touch Silver from Craigslist yesterday for $15. It's in good condition overall, but I don't think the charcoal bowl has been cleaned out...ever. Yesterday I used a fireplace shovel to clean out most of the gunk and scrape the walls as best I could. There is...

    Guru Eyelets

I am a very big fan of the eyelets. To me, they are much nicer than running wires under the top or through the side door. The question I have is, could you replace all 4 of the top screws with eyelets? On my last cook, I did 3 butts. With 4 eyelets I could use one for my DigiQ pit probe, one...

    Basic rub recipe ?
