Charbroil H20 Smoker, need operating guidance

I had a CharBroil smoker. The best operating advice I can provide it to put it on the curb, as I did. Don't mean to discourage you, just telling it like it is. See the comments at this site: Amazon review I did manage to get some decent Q from the CharBroil, but only after mods (drilled...

    Royal oak charcoal burn time

John, you mean briqettes not lump, right? Don't know about the briqs, but Royal Oak lump seemed a little ashy to me when I used 4 bags this spring. I did however like the aroma, had a good woody smell.

    high temp WSM question

I'm doing some chicken at this moment on a dry pan. The hood temp got up to 390, I just backed the vents down to get it to 350. I'm burning Humphreys lump, which burns pretty hot. Good luck.

I bought a bag of alder chunks from Cabela's this spring, good quality and $hipping wasn't too bad. Cabelas's alder chunks

Storage -- Simple way to keep the rain water out

You can also spray the Weber cover with Coleman's Tent Sealer (a silicone I guess). It's made mine tight as a duck's butt.

    wood?

I just bought some alder & apple from Cabelas online. Prices aren't bad, shipping is cheap, & they have a variety of quality chuks. Check it out.

Weber Smokey Mountain vs. Brinkman Charcoal Smoker

I had a CharBroil ECC which was a knockoff of the Brinkmann. I made a lot of modifications and eventually got some pretty decent Q from it, but only with a lot of babysitting. I put it on the curb when I bought the Weber. If you can spend $400+, look at the Big Green Egg line, everyone agrees...

    Reliable source for lump

I happened to stop by Lowe's today, noticed they had some big stacks of Cowboy lump at a good price (8 lbs/$4.99). It's not the top-ranked (Cowboy review)but it's OK basd on the bag that I used.

    Reliable source for lump

Vic, Here are the 2 places. I go to Smith & Boyd - Bell Charcoal is in Manayunk, I had just called them for prices & availability (they also sell for $9.50/20 lbs). Both are Mom n Pop type operations, make sure you call first to check their hours and verify that they have what you want in...

    Can't Decide

Charcoal-cooked tastes better. Gas-cooked is way more convenient when short on time. Everyone needs one of each. Before you spend the money and patio footage on another grill, check the modifications section for how to grill on your WSM. I haven't decided which modification to do, but I'm...

    Reliable source for lump

Here in NJ (near Philadelphia), I have found 2 sources - fuel oil companies. They sell all types of fuel including coal and lump charcoal. They are the only places where I have found 20 lb bags of Humphrey's and Royal Oak (each $9.50/bag). You might try checking with fuel companies in your...

    Help! accidentally froze ribs.....

Hope they turned out OK. I froze a rack on purpose once, already rubbed, thinking I could just thaw and smoke the next weekend. They went a bit gray, and the flavor was not nearly as good as fresh.

    Yet another charcoal topic

Cowboy seems to be available at most of the mass marketers. I had to look around to find Royal Oak & Humphrey's (2 good brands) at a couple area coal/fuel dealers. It was worth it. - Mike

Another way to light a chimney

I'm sure I'm not the first to try this. I sometimes want to get a fire going faster than a chimney and 3 sheets of newspaper can manage, without all the smoke and ash. I had a single-burner camp stove ($19 @ Target) in the garage. I used tin snips to notch the bottom of my chimney to match...

Smoke wood sources - Philly metro area

Rich - Thanks, that sounds like a good opportunity to grab some wood and some Q. In the meantime, a friend lost part of the cherry tree in his yard (swear I didn't do it) and I am the beneficiary. Coleman - You are right about the Humphrey's, no flavor at all and a lot of small pieces, but...

Smoke wood sources - Philly metro area

Anyone have any good sources for smoke wood chunks (other than hickory & mesquite) in the Philadelphia/SJ area? I'm looking for apple, cherry or other fruit woods. For charcoal I've been very happy with Humphrey's lump, $9/20lb at Smith & Boyd, 1901 E Lehigh Ave, Philly 19125-1196 (215)...
