    For the last dinner of 2013 we stayed home and made some cornish hens on the WSM along with sides. I rubbed these down with Sazo'n and ran the WSM between 225 and 250 over lump with just a little oak for smoke. This was just my first helping................ Cheers in 2014!

    Grate replacement: Weber stainless or charbroil cast iron?

    I have a craycort I am very happy with. What I like most about them is that they will last me a lifetime with proper care. I use them everyday and went through weber grates like socks. There is a learning curve with craycorts, but after you have them dialed in you probably won't ever have any...

    Lid Holders

    Paul, if you add a thermometer on the lid you will be able to slide the lid off and it will hang by the wingnut inderneath and will not move because the lid will be stabilized by the smoker body it sit's against. Boy was that a long sentence.
