You can do that with a standard probe, no problem. If all you do is low and slow this may work out fine. Water could be your remaining enemy, the maverick probes I have used (I killed LOTS) died primarily from heat or water, mostly water. Thermoworks probes seem to be more water resistant...

RE: grounding issue... I do prefer ISOLATED thermocouples as opposed to grounded ones. What kind of thermocouple are you using?

You dont have the TC amp (SMD) components on your HM board, right? If not there are literally only 3 components between the probe jack and the ATMega to check.... The pit probe connects to the corner pin in the ATMega...

Maybe one TC is isolated and the other isn't?
