    I was surprised that the air temp from the Smoke unit and the Smokefire were pretty consistent. There would be swings +/_ 15 from the set temp but it would level out for long stretches of time. The air probe was in the middle of the top rack, the ribs were on the top rack also.

    I love making St Louis ribs, I have been doing them on WSM 22 and the results are good, come out the way the I hoped. The last few times I used the Smokefire and they were not the same, my family agreed. The flavor was ok but they seemed tough, we are not fans of fall off the bone, like them...

    Thank you ! The only thing I forgot was the whiskey, my sons good friend has a craft brewery, Destination Unknown Brewing Co. (DUBCO) and when he runs new batches he is kind enough to drop off some free samples.

    I just ordered a Bison Tri-Tip, about 2.5 lbs, hoping it will be delivered on Friday. The plan is to do it over charcoal, reverse sear. Does anyone have experience grilling Bison ? I can use all the help I can get. Thanks.

    I have a 22" Master Touch and always make sure the grates and exterior are clean and well maintained. Grill is covered all the time. Do the interior of the bowl and lid need to be cleaned once in a while too ?
