    Tom. I had the same issues you had. If I want 225 , then I go with 8 briquettes. I think it generally just runs hotter with 10-12 briquettes and wood that can also burn. I’ve also come to accept 250+/- is perfectly fine. I start early and faux cambro everything.

    The Trader Joe’s Piri Piri sauce is excellent too. The Nando’s version very good as well but my house prefers TJ. Will need to try Portugallo.

    Well, thanks for whoever turned this one into a TBWBB classic. It might give the Daughtry wings a run for the money in my house. Need a good name for it the next chili cook off!! I realized just before the comp calling it green pork chili might be a bad idea.
