Fun with Infrared (several pics, sorry)

Thanks for the pics Russ. I would be interested to see how long it takes for the heat to even out throughout the smoker. Meaning meat and lid on, take a pic, and see how the draft heats up the smoker and then when it balances out. I bet you could also easily show how removing the lid affects...

Is the Charcoal Rim in my WMS necessary?

Correct Frank, losing the volume of the interior of the can, not the minimal thickness of the wall.

    I want to sleep

Thanks Richard, who makes that rib rack ? I've seen the Weber in Brett's post and I have a rachlen, but I think it's only 4. For me, anything over 3 or 4 racks and I am probably breaking out the lang. It's an easy cook for ribs. Overnighters, not so much.

Is the Charcoal Rim in my WMS necessary?

By using the coffee can method you are losing space for some unlit coals. I pack the ring with unlit to the point its falling over the ring. I then arrange the unlit around the edge to form a bowl in the center. Dump your lit there in the center.14+ hours depending on how hot you run and how...

How did it go? And where did you fit 16 racks on a 22"? I'd be breaking out my big boy for that many racks.

Yes the berries can be smoked with and are a good substitute for pimento wood which is very hard to find. Tip I learned from Kevin, make small foil packets of berries and poke a whole in it and bury several in your unlit charcoal for long cooks. You can also throw a handful on lit coals on...

    Prices for brisket packers?

Regarding restaurant depot the kcbs one day pass should be working again. Also you do not have to be in the food industry. All I needed was a copy of our company's business license. We are in cargo transportation. There is no annul fee.

New Perfromer grill... Did I make a mistake?

    1. I usually dump the coals, adjust my vents and put the lid on for a few minutes. This gives you a better idea of what temp you are starting at. You can then make some vent adjustments. 2. Yes, you would have been fine @ 400 indirect on chicken. 350-400° is no problem for chicken indirect. I do...

New Perfromer grill... Did I make a mistake?

Close the vents down and reuse the charcoal. Next time dump the used charcoal in your chimney, fill to the top with fresh coals, and light. When you first start cooking on the grill it may take a little while to shut it down, but that will get better with more cooks. After I cook I shut my grill...

    Pulled Pork for 100?

I cook large amounts of pork at a time very frequently. Most of the time I am cooking, pulling, cooling, and packing by weight so its easy to figure out my yield. Out of the last 300 or so lbs I have cooked my yield has ranged from 50-53%. I do not trim prior to cooking and cook bone in. I...

    Throwdown #13: Chicken Wings

So I did not get the best pictures but I was cooking by myself and pretty busy. For my wife’s best friend’s birthday her husband threw a surprise party with about 25 friends. Her first surprise was seeing all of us out in the driveway, her second Lang 84 in her driveway. Cooked a case of...

Where to purchase glass BBQ Sauce bottles?

Here they are on Amazon. Usually $10-12 at places like walmart, Ace or a grocery store http://www.amazon.com/dp/B008586UJO/?tag=TVWB-20 The quarts are also good for lots of storage. Keep in mind food safety. You can just make sauce, pour it into any container and leave it on a shelf.

    Chicken Brine

Due to the time constraints of a competition flavor brining will have minimal impact on your chicken. Remember you can not pre-brine for a comp. My most successful results were with simple brines of water, sugar (turbo) and salt. For flavor brines you need a lot more of the flavoring and a lot...

I found someone whose barbecue is better than yours!

My wife tells people I've ruined her too. She no longer can eat most chain restaurant or any fast food. Delivered pizza is out of the question. BBQ??? Only if it's a friend and she wants to be nice.

Where to purchase glass BBQ Sauce bottles?

Bryan, Ball jars/containers are going to be you best bet. I use a lot of them. They are easy to clean (just toss the lid, wash the jar & ring, boil before using, they are cheap and they are easy to find. You can get a 12 pack, with rings & lids for $10 and then you are just buying new packs...
