    I am fairly sure that I get the best quality from the butcher. I am fairly sure that Sams or Wal-Mart has better prices most of the time. The service at the butcher shop is much better. If I wanted the absolute best quality I would hit up the butcher shop.

That is if you want to run it hot put the lit coals on the bottom and add unlit coals on top. When you want it to run normal and long put the lit coals on the top of unlit coals...

    When you are selecting the meat. If the butcher mistakenly puts the price per pound significantly less that the listed price do you correct him or tell him you changed your mind; that you want twice as much? What is the standard price for baby back ribs? The list price is about $4.50 around here.

    New Year's Cook

    I also like the clean-up. I thought at first I would have problems with a slower start (cold sand vs. hot water) but so far no problems. I have no proof but I am thinking I have a slight increase in operating temp? How much sand are you running with?

    It will work. Until mine died, (the weber would not calibrate and out of frustration one day I killed it) I used it to keep an eye on the temp. Just stick it through the top. A simple long (10") turkey thermometer also works. Best thing is to learn how to approximate the time. What is best...
