Another new Kingsford charcoal coming soon?

I with you, Bill. I'm buying KBB for under $.30/lb. on sale, so, assuming a 25% longer burn time, I should be willing to pay $.40/lb (presumably on sale). Unsure if the convenience is worth 2.5x that. Also, on REALLY long cooks (like a whole shoulder), I just add more charcoal. In short, I'm...

    Interesting new items at Costco

Anyone cook one of their Choice thick Ribeyes on the bone? Also, saw they had Prime tri tip for $6.99/lb!

**Fail** BP method for brisket - too fast/undercooked

I sincerely don't think it's the Thermapen. I run it under our InstaHot routinely for cleaning and it's consistent. We're circling the crux of the issue, though: How can it probe tender and be at those temperatures and still be tough? I believe it because it happened, but I'm still trying to...

**Fail** BP method for brisket - too fast/undercooked

I've cooked probably 10 BP briskets and never had what I'd deem a failure.... maybe a little overcooked but tender & tasty. This was borderline bad. And, no, Len, I was a little suspicious when I grabbed it (and it didn't have that jiggle), but the probe test and temperature part of my...

**Fail** BP method for brisket - too fast/undercooked

Cooked a Costco 14 lb. prime packer this week. I don't normally check temperatures, using my Thermopen solely as an ice pick for probing. But, for whatever reason--probably the fact I was showing a newbie how to get perfect  brisket, I checked temps. We were cooking on his Traeger...

    ¡Un cuenco de Pozole!

I've made posole for deer camp and people flip. I used big chunks of pork shoulder and simmer down in the dutch oven until a dark roux forms before adding broth. Gosh it's good!

    CAB tenderloin

Bought a 6.5 lb tenderloin and broke it down into a nice Chateaubriand, eight small "breakfast" steaks and a goodly pile of yummy stew meat. BBQ'd the roast tonight over indirect RO lump, and it was delicious. Pulled at 130 internal and was rewarded with a nice Medium throughout. (I have a...

Tacos de Lengua. ( Beef tongue tacos) #WSCG

Tony, one question: Is that a picture of it peel or unpeeled? Can't wait to try one day. At my favorite truck, they sell an amazing lengua torta sandwich with avocado. Mouth is watering just thinking about it with their salsa verde and those tender torta buns with a nice crisp from the...

Pork picnic + CAB packer overnighter

Ended up cooking for at least three families who "needed" a little BBQ. 9.3 lb pork picnic I found for $.99/lb awhile ago and froze and a 15.8 lb CAB packer. I planned on 14-18 hrs and pulled after 15. I overcooked the brisket even though I pulled when it probed tender (195-199). By the time...

BP prime brisket cook / Kingsford comp briquet fail

I agree. Even if heat was 325-350 with foil. Two things: It's Prime and I wet age them in the bottom of the fridg. My experience is the wet aging can really speed up the cooking.

I don't like Mondays, but I do love BBQ'd salmon!

Needed a pick-me-up after a long Monday, so grabbed a beautiful sockeye salmon filet and some yearling oysters for the Performer. Paired those with a delicious salad which included butter lettuce, blanched haricot verts, marinated mozzarella, coddled eggs, grilled corn, maters and a nice...

BP prime brisket cook / Kingsford comp briquet fail

Did a 13 lb. prime packer last week and was very happy with the results. 275-300 at the grate (I have a Tel-Tru glow thermometer mod) over pecan. Used Kingsford comp briquettes for the first time and was disappointed; they burned relatively quickly and did not boost the heat like I expected...
