    A few seconds with a weed burner and a wire brush will clean it right up. I HAVE built a hot lump fire in the bottom of the WSM and set the waterpan over it to let the gunk burn off, but the weed burner works better. I do like my weed burner... Short of a weed-burner, Dawn Degreaser spray...

    What about Kingsford?

    I've been using new Kingsford with the MM with good results, just lots of ash. I don't even pre-light coals to go on top anymore - I just hit the top of the full charcoal ring with the weed burner until I have a good catch going in the center of the ring, and it works great. Love that weed...

    I'd leave out the mesquite and go somewhat light on the hickory, personally. Beef is easier to overwhelm with smoke flavor than pork, and I personally just don't like the sharp whang that mesquite can give beef. Light hickory is my vote, unless you can find a few chunks of oak laying around...
