    Johnny, I am betting your right because the bottom rack was completely covered and I had to place some of the eggplants in a second layer on the bottom rack. This lack of air flow (coupled to a lesser extent with the other two factors mentioned above) seems to be the major contributing factor...

    Steve, thanks for info. The times that I cooked butts I followed Chris' recipe to the letter and used his cook log as a guide. It would be nice for someone to post a cook log using the PP for comparison.

    Clay pot base in place of water pan?

    Can anyone describe how the clay base has altered the way they cook? What are the benefits of this clay base? I understand that you use less fuel and keep the temperture high, but do you have any difficulty stabilizing the temp. How long are your cooks? And do you need to add any more fuel?

    Ken, Looks like halfway is a good compromise. I plan on turning the dial to 250 at the 12 o'clock position. I'm gonna stick with a 2.5 inch stem length as that appears to the the consensus around here. THanks.
