    First Fajitas

While fajitas have been on my to-Do list for some time, it isn't what I had planned on making. Yet, sometimes things just fall into place. There is some room for improvement in my technique, yet we thoroughly enjoyed these. To top it off, I was finally able to use a sizzle platter a former...

Cleaning, Some Questions & the Perfect Bite

Today was spring cleaning for the Weber Brothers. I dismantled the WSM, Performer, and OTG and did a good cleaning on all three. It took much longer than I had expected. As the weather breaks a bit from the cold snowy winter, I am putting the deck together for the entertaining season. It's...

Anyone else have a grilling "tool box"?

Well, I had a little corner in the garage that I use . . . things have grown and gotten totally messy. I also have a new garbage can on the deck to hold things. I do not like the look of that at all. My thought on organizing is to get a deck box and keep the gear where the grills are. I...

    Jail Bird Chicken Gets Canned!

What are you using to create your notes? Is this a canned program or something you have put together? It's a nice presentation.

Not Sure Where to Put this topic.. USING WSM for Clam/Lobster bake?

I have only done seafood boils on the grill, not the smoker. One unique way that I have been doing is to create the boils individually for each person. I seem to cook for a lot of people who don't want mussels, or scallops, or sausage, or whatever. Several years ago I read an article about...

    Confused

Each choice seems to have its proponents. For me, I never have used water in the pan. I use a clay pot foiled placed in a foiled water pan. I then double foil both pieces together. It is those sheets of foil that I replace on occasion. I have been using a drip pan far more frequently of...

    Performer Igniter

There appeared to be a blockage. Once I rattled a coat hangar in there, all has worked as expected. I didn't see anything when I did so. Perhaps all I did was move something around. I am not sure what happened, but it is working.

    which one

I foil a clay pot and place it inside the foiled water pan. I then double-wrap these two in foil too. The foil on the pan and the clay pot do not get replaced. Depending on what's been cooking, the outer layer of the "package" is replaced. I've been using a drip pan of late on all cooks...

    Monday's Porterhouse

Monday's can be rough. All day long there was a little voice that kept me level so I didn't pull a Brenda Ann Spencer episode. Once home the children eventually went to sleep, and my wife disappeared for a bit. I may not like Monday's, but I sure enjoy Monday dinners. 1.45#, rubbed with...

    Performer Igniter

After rain all day yesterday, I had to wait until to today to address this. I got the coat hanger in and wiggled. Nothing seemed to come out or move, but the igniter appears to be working as it should. One thing down . . . there's still a couple more items to deal with. Thanks!
